How to Make the Best Carne Adovada - BurqueñoBQ
Carne Adovada is a traditional New Mexican dish consisting of pork marinated in Hatch Red Chile sauce. When I make Carne Adovada, I like to use smoked pork tenderloin because it is such a lean yet juicy and flavorful cut of meat.
Once the pork has absorbed a ton of smoke flavor, I cover it in Red Chile Enchilada Sauce, add some lime and salt, and cook it in the oven until the meat is so tender that it shreds apart.

Cooking Stuffed Sopaipilla with Carne Adovada
Eric See, chef and owner of Ursula in Brooklyn swung by the MUNCHIES kitchen to show us how to make traditional New Mexican pork sopaipillas.
In this video, See marinades and braises some fatty pork, makes a beautiful red chili sauce, and then preps some pinto beans to throw onto homemade fried dough. What else could one ask for? Lettuce, tomatoes, and cheddar cheese, of course.
Also… few cannibal references in this video ... Chef See, are you ok?
