How To make Carmelitas
1/2 cup butter or margarine
1 cup sugar
1 egg
2 envelopes premelted chocolate
(1 oz. each)
1/2 cup milk
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped nuts
36 caramels :
(or 36 cherries)
**FROSTING:** 1 1/2 cups powdered sugar
2 tablespoons light corn syrup
1 envelope premelted chocolate
2 tablespoons hot water -- up to 3
In bowl mix butter, sugar, eggs, chocolate, milk, vanilla. Mix in remaining ingredients to a soft dough, scraping bowl constantly. Chill dough 1 to 2 hours. Heat oven to 400 degrees. Mold dough around caramel halves or cherries and place on ungreased baking sheet. Bake about 7 minutes or until set. Cool. Dip in frosting.
Frosting: In small bowl blend all ingredients. Dip cooled cookies in frosting, allow to dry.

** Ingredients **
- 1 cup + 3 tbsp flour
- 1 cup quick oats
- 3/4 cups light brown sugar
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cups butter
- 1 cup chocolate chips
- 1/2 chopped pecans
- 12 oz jar of caramel ice cream topping
Combine flour, oats, brown sugar, baking soda, and salt.
Microwave butter to melt.
Pour butter into flour mixture.
Press half of the mixture into the bottom of a greased pan.
Bake for 10 minutes at 350 degrees.
Sprinkle chocolate chips and chopped pecans on that layer.
Mix caramel and 3 tbsp flour.
Pour caramel mixture into pan.
Crumble the rest of the flour/oat mixture on top.
Bake for 20 minutes or until golden brown.
Let sit at room temperature for 30 minutes.
Cover and refrigerated until cool enough to cut.

These Carmelitas are made with layers of soft cookie, melted chocolate, and silky smooth caramel. So easy to make and delicious too! Start by creating the cookie layer by blending ingredients into fine crumbs. Then bake in a glass pan for 10-15 minutes at 350 degrees. Meanwhile melt caramel and milk over medium heat until smooth. Layer chocolate chips and caramel over cooked cookie crust. Then sprinkle leftover cookie mixture over the top. Bake for 20 minutes. Let your Carmelitas cool then cut into bars and enjoy an out of this world dessert!

Chocolate Caramel Oat Bars (Carmelitas)
Make them at home!
Yield: 20- 24 bars
INGREDIENTS
2 cups Quick Oats
1 3/4 cups All Purpose Flour
1 1/2 cups Brown Sugar
1 tsp Baking Soda
1/4 tsp Salt
1 cup Melted Butter
2 1/2 cups Semi Sweet Chocolate Chips
50 Soft Caramels, unwrapped
1/2 cup Heavy Cream
PREPARATION
1. Preheat your oven to 350˚F/ 175˚C.
2. In a large mixing bowl, combine oats, flour, brown sugar, baking soda, salt, and melted butter. Mix until well combined and has a crumbly consistency.
3. Line a 9x13 baking pan with parchment paper and lightly coat with a nonstick spray.
4. Pour about 1/2 of the oat mixture into the pan and press with the back of a spoon or spatula until its nice and compact. Save the other 1/2 of the oat mixture for later!
5. Pour 2 cups of chocolate chips over the oat mixture and spread them out evenly. Save the 1/2 cup for the top.
6. In a saucepan, melt the soft caramels and the heavy cream until it becomes a smooth.
7. Pour melted caramel over the chocolate chips & oat mixture. Carefully spread the caramel until it covers the chocolate.
8. Pour the rest of the oat mixture over the caramel and spread out evenly.
9. Add the other 1/2 cup of chocolate chips on top.
10. Bake for 20-25 minutes, or until the crust has turned a golden brown. (Times and temperatures may vary from oven to oven)
11. Allow to cool COMPLETELY before cutting into bars.

Use this easy-to-follow recipe to make a cake with a delicate filling and crispy crust.
Ingredients for pastry:
Rolled oats – 13 OZ (400 gr)
Regular flour – 13 OZ (400 gr)
Unsalted butter – 4 OZ (120 gr)
Sugar – 3 OZ (90 gr)
Sea salt - 1 tsp.
Baking powder - 1 tbsp.
Ingredients for chocolate cream:
Single cream – 12 OZ (350 gr)
Bitter chocolate (more 80% cocoa) – 9 OZ (270 gr)
Sugar – 3 OZ (90 gr)
Honey - 2 tbsp.
Ingredients for the bottom layer:
Eggs - 3
Sugar – 3 OZ (90 gr)
Soft cottage cheese – 20 OZ (600 gr)
Vanilla extract - 1 tbsp.
Walnut – 2 OZ (60 gr)
1. Stir with a spatula rolled oats, flour, sugar, salt and baking powder. Add the melted butter and mix well with a spatula or with your hands.
2. Put the ⅔ of dough into a mold and spread it evenly.
3. Bake in preheated oven 340°F (170 °C) for 15 minutes.
4. Warm single cream in a pan (do not boil) and add chocolate, sugar and honey. Stir until become creamy and remove from heat.
5. Beat eggs, gradually adding 100 grams of sugar. Add cottage cheese and vanilla extract. Mix.
6. Put cottage cheese layer into chilled pastry.
7. Spread the chocolate cream, some walnuts and the remaining pastry.
8. Bake in a preheated oven 340°F (170 °C) for 45-50 minutes.
9. Let the cake to cool. Optionally, Carmelita can be served with melted caramel.

These Carmelitas are chock full of caramel, chocolate, and pecans. However, the real star of the show is the shortbread oatmeal cookie crumble because it is subtly sweet, with tons of texture.
They are seriously really good. I am going to need to hide the pan before I eat it all!
