Carmelita Cookie Bar Recipe!
Carmelita cookie bar recipe that's very simple and absolutely delicious! These cookie's flavor meld together beautifully over the course of 24 hours and are best served then!
***Update *** I have made this six more times in the past 7 months! They are that good!!!! If you haven't tried them yet I highly recommend it!

INGREDIENTS:
3/4 cup butter, melted
3/ 4 cup light brown sugar, packed
1 tablespoon vanilla extract
1 cup all-purpose flour
1 cup whole-rolled old fashioned oats
1 teaspoon baking soda
35 - 40 caramels
1/2 cup heavy cream
1 cup semi-sweet chocolate chips

Quaker Carmelitas | Quaker®
The holidays are just around the corner and you have friends, coworkers, and family members to impress. Here’s a sweet treat everyone will enjoy!
Ingredients:
1 ½ cups melted butter
¾ cup brown sugar
1 tbsp vanilla
1 cup flour
1 cup Quaker® Oats
1 tsp baking soda
¼ tsp salt
40 caramel squares
½ cup heavy cream
1 cup semi-sweet chocolate chips
Preparation: Preheat oven to 350 degrees. Prepare an 8x8 pan with non-stick spray and set aside. Add brown sugar, vanilla, and butter to a bowl and whisk until smooth. Add oats, flour, salt, and baking soda. Pour half of the mixture into the pan and bake for 10 minutes. In the meantime, microwave caramel and heavy cream for 4 minutes. When 10 minutes is up, remove pan from oven & sprinkle chocolate chips on top followed by the caramel mixture. Add the other half of the oat mixture on top and bake for another 15-18 minutes. Cut into squares & enjoy!

INGREDIENTS
Nonstick cooking spray, for pan
2 c. all-purpose flour
2 c. old-fashioned oats
1 1/2 c. butter, softened
1 1/2 c. brown sugar
2 tsp. pure vanilla extract
1/4 tsp. kosher salt
1 1/2 c. soft caramels, unwrapped
1/4 c. whole milk
Pinch flaky sea salt
1 1/2 c. chocolate chips
DIRECTIONS
1. Preheat oven to 350°. Grease a 9”-x-13” baking pan with cooking spray then line the pan with parchment paper.
2. In a large bowl, combine flour, oats, butter, brown sugar, vanilla and salt. Stir until just crumbly and evenly combined. Press half of the mixture into the prepared pan and bake until beginning to turn golden, about 10 minutes. Let cool for 10 minutes.
3. Meanwhile, make caramel sauce. In a small saucepan over low heat, combine caramels and milk. Cook until the caramels have melted and stir in sea salt.
4. Pour the caramel over the baked oat base, then scatter chocolate chips over the caramel layer. Top with remaining oat mixture.
5. Bake until the oat crumble is golden and the caramel is bubbling around the edges, about 25 minutes. Let cool in pan until room temperature then refrigerate until caramel filling is set. Slice into squares and serve.

These Carmelitas are made with layers of soft cookie, melted chocolate, and silky smooth caramel. So easy to make and delicious too! Start by creating the cookie layer by blending ingredients into fine crumbs. Then bake in a glass pan for 10-15 minutes at 350 degrees. Meanwhile melt caramel and milk over medium heat until smooth. Layer chocolate chips and caramel over cooked cookie crust. Then sprinkle leftover cookie mixture over the top. Bake for 20 minutes. Let your Carmelitas cool then cut into bars and enjoy an out of this world dessert!
