How To make Caribbean Scones
1 c All-purpose flour
2 ts Baking powder
1/2 ts Salt
1 ts Sugar
1 c Mashed cooked sweet potatoes
3 tb Butter, melted and cooled
Butter Honey, if desired Created by West Indians living in England, these are scrumptious. Preheat oven to 375F (190C). Grease a baking sheet; set aside. Sift flour, baking powder and salt into a medium-size bowl; stir in sugar. In a large bowl, thoroughly mix potatoes and 1 1/2 tablespoons melted butter with a fork. Add dry ingredients and mix to form a soft dough. Turn out onto floured surface. Roll out with a floured rolling pin or pat dough with your hands to make a round about 1/2-inch thick. Cut into rounds with a 2-inch fluted or plain cookie cutter. Place 1 to 1 1/2 inches apart on baking sheet; brush tops with remaining 1 1/2 tablespoons melted butter. Bake about 20 minutes or until light brown. Split and serve warm with butterand honey. Makes about 10 scones.

WHITE CHEDDAR SCONES
2 cups all purpose flour
1 tbsp baking powder
½ tsp salt
6 tbsp cold butter, cut into 1 inch pieces.
2 cups Cabot Extra Sharp White Cheddar
¾ cup milk
½ tsp yellow mustard
¼ tsp pepper
1 egg yolk
1 tsp water
Preheat oven to 400 degrees.
Place flour, baking powder, butter and salt into a food processor and pulse.
Finely grate cheddar cheese. In bowl combine flour mixture, grated cheese, mustard, pepper and mix to combine.
Add cold milk and stir gently to combine.
Turn onto the counter and gently press together to for a dough. Cut into 8 equal pieces and place onto a baking sheet.
Mix egg yolk with water. Brush top of scones with egg yolk then place into preheated oven and bake for 17-20 minutes until the tops are golden brown.
Remove from oven and serve warm.

1/2 cup veg shortening (cold, in cubes)
¼ teaspoon salt
1 cup or more ice cold water
Filling mixture:
1 1/2 cups currants
1/4 cup brown sugar
1 tablespoon cinnamon
1/2 cup melted butter
1 egg + 1 tablespoon milk
