Moroccan LAMB, COUSCOUS & CHICKPEA STEW! Delicious Family Dinner! Recipe by Always Yummy!
Lamb braised with spices and herbs in an aromatic sauce and served with couscous is a perfect dish for a festive table or family dinner. There is not much fuss about cooking it but the result is amazing – this meal will become a culinary event.

✅ Ingredients:
• lamb – 1,7 lb | 800 g
• carrot – 10,5 oz | 300 g
• onion – 10,5 oz | 300 g
• chopped tomatoes – 10,5 oz | 300 g
• dried apricots – 7 oz | 200 g
• canned chickpea – 14 oz | 400 g (1 tin)
• couscous – 10,5 oz | 300 g
• water – 3 cup | 700 ml
• olive oil – 2 tbsp
• ground caraway – 2 tsp
• ground coriander – 1 tsp
• red chili flakes – ½ tsp
• chopped ginger – 1 tbsp
• garlic – 3 cloves
• cinnamon – 1 stick
• fresh parsley – 1 oz | 30 g
• ground black pepper – 1 tsp
• salt – 2 tsp
✔︎ You will need:
• heavy stockpot or cauldron
• carving board
• bowl
• food film
???? Preparation:
1. Cut the lamb into small pieces, onion into half rings, carrot into round slices.
2. Heat a stockpot over high heat, add the olive oil then the lamb and fry over high heat for 3-4 minutes flipping occasionally.
3. Add the onion and carrot and fry over medium heat for 3-4 minutes.
4. Add the chopped tomatoes, dried apricots, canned chickpea, ground caraway, black and red pepper, ground coriander, chopped ginger, minced garlic, 1 tsp of salt, a stick of cinnamon and 1 cup / 250 ml of water and stir.
5. Bring to a boil, reduce the heat to low, cover with a lid and braise for 1 hour 30 minutes.
6. Pour the couscous with 2 cup / 450 ml of boiling water, leave for 5 minutes, then salt and pepper to taste and stir.
7. Add the chopped-up fresh parsley to the lamb and stir.
8. Lay out the Moroccan lamb on a serving plate and serve to the table with couscous.

Turkish Meat Pie/Meat Trap or Mutton baked in bread is a delicious recipe dish from Turkey.

For the dough: using 250 ml cup
All purpose flour - 2 1/2 cups (325 grms)
Yeast - 1 tsp
Sugar - 1 tsp
Salt - 1 tsp
Oil - 2 tbsp
Procedure:
1. Add yeast to 1/4th cup warm water.
2. Leave for 10 min so that the yeast dissolves well in water.
3. After 10 min, add sugar to the yeast. Mix well.
4. Add all purpose flour to a bowl.
5. Add salt and yeast. Mix well.
6. Add oil. Add water gradually as per the requirement and gather into a firm dough.
7. Cover with a damp cloth and leave for 1 hr.
For the Mutton:
Ingredients:
Mutton (big pieces)with bones - 750 grms
Oil - 1/4th cup
Capsicum - 2 medium
Carrots - 4 medium
Onions - 250 grms
Crushed garlic - 2 tsp
Red chilli powder - 2 to 2 1/2 tsp (as per the taste)
Black pepper powder - 1/2 tsp
Spice Powder (cinnamon,cardamom, black cloves & caraway seeds) - 1 1/2 tsp
Coriander Powder - 1 1/2 tsp
Salt - 1 1/2 tsp
Tomato Puree/Paste - 3/4th cup (OR instead, add 3 tomatoes, chopped)
Chopped coriander - 2 tbsp
Procedure:
1. Add oil to a pan.
2. When the oil is hot, add capsicum cut into strips.
3. Add carrots, diagonally cut into thin pieces.
4. Stir fry for 1 min and remove from the pan.
5. Add diced onions. Stir fry for 1 min.
6. Add crushed garlic. Stir fry for 30 sec.
7. Add red chilli powder, black pepper powder, spice powder, coriander powder, salt and mutton.
8. Mix well.
9. Add tomato puree/paste.
10. Add 1 cup water.
11. Close the lid. Cook on low flame till the mutton gets tender.
12. Flip the mutton pieces in between the cooking process.
13. When the mutton gets tender, cook till the water dries up and till the oil separates.
14. Switch off the flame. Garnish with chopped coriander.
Assembling:
Ingredients:
1. Divide the dough into 2 equal portions.
2. Using dry All Purpose Flour, roll out a portion into a flat round bread.
3. Brush an Aluminium plate with oil. Layer the flattened bread along the corners of the plate.
4. Arrange the mutton pieces on the layered bread and add gravy on the top.
5. Arrange semi-fried carrots and capsicum strips.
6. Roll out the other dough portion into a flat round bread.
7. Arrange or fix this bread on the top of the mutton along the corners of the plate.
8. Brush the bread with beaten egg.
9. Sprinkle some sesame seeds and black seeds on the top.
10. Place this plate in a pre-heated oven. Bake at 180 degrees celsius for 20-25 min.
Turkish Meat Pie is ready - Serve hot. Cut the top bread along the corners - Enjoy with mutton.

*Das Originalrezept für Irish Stew*
Zutaten:
500 g Lammfleisch ohne Knochen
1 kg Kartoffeln
1/4 Kopf Weißkohl
300 g Karotten
2 Zwiebeln
3 Knoblauchzehen
1/2 Stange Lauch
4 EL Öl
2 EL Mehl
1,5 Liter Rinderbrühe
1 TL schwarzen Pfeffer (frisch gemörsert)
2 TL Kümmel
2 TL Thymian
etwas geriebene Muskatnuss
Salz nach Geschmack
Karotten, Kartoffeln, Zwiebeln schälen und grob würfeln. Lauch in feine Ringe schneiden und Kohlblätter abschälen. In einer großen Pfanne 2 EL Öl erhitzen. Das Lammfleisch in mundgerechte Stücke schneiden und die Hälfte im Öl anbraten, bis es leicht gebräunt ist. Das angebratene Fleisch herausnehmen, mit Kümmel und Thymian würzen und in einen Bräter legen. Die Hälfte des zubereiteten Gemüses (ohne Kohl) darüber verteilen.
In derselben Pfanne das verbliebene Öl erhitzen und das restliche Lammfleisch genauso anbraten. Dieses dann auch in den Bräter geben und mit dem restlichen Gemüse bedecken. In der heißen Pfanne das Mehl einrühren, bis es das Fett und den Saft aufnimmt und kurz anbraten. Etwas Rinderbrühe hinzufügen und zu einer glatten Sauce verrühren. Die Sauce über Fleisch und Gemüse im Bräter gießen, gehackten Knoblauch hinzufügen und mit der restlichen Rinderbrühe auffüllen.
Bei 180° C im geschlossenen Bräter für eine Stunde im Backofen garen. Danach die Kohlblätter darüberlegen und für eine weitere Stunde garen. Während der Garzeit sicherstellen, dass Fleisch und Gemüse stets bedeckt sind. Bei Bedarf kochendes Wasser hinzufügen. Falls das Gericht nach 2 Stunden noch zu flüssig ist, die Garzeit verlängern. Zum Abschluss mit Salz und frisch gemörsertem Pfeffer abschmecken.
Festkochende Kartoffeln sind für das Gericht ideal. Lammfleisch mit Knochen kann für ein intensiveres Aroma verwendet werden. Lammsteaks sind ebenfalls eine gute Wahl. Irish Stew schmeckt aufgewärmt am nächsten Tag noch besser und hält im Kühlschrank bis zu 3 Tage. Falls das Stew zu flüssig ist, kann es ohne Deckel weiter gegart oder mit Maisstärke/pürierten Kartoffeln verdickt werden.
