THE AUTHENTIC BEEF BOLOGNESE RECIPE | Chef Capon

Beef Bolognese :
Ingredients:
2lbs ground beef
4 carrots, diced
5 ribs celery , diced
2 spanish onions, diced
4 Bay leaves
3 TBSP Tomato Paste
4 Sprigs Rosemary
10 cloves Garlic, shaved
1 28oz can crushed tomatoes
4 Cups Red wine
4 TBSP Olive oil
1 Quart chicken stock
12oz pancetta, diced
1 pint whole milk
1 Box rigatoni
1 grated Parmesan
4 sprigs oregano
1 TSP Chili Pepper Flakes
Directions:
1. In a large stock pot over medium heat add olive oil, add ground beef and caramelize on both sides remove beef from pan. Ensure it is all broken up and crumbled. Remove the beef from the pan.
2. Add pancetta to pan and render out all fat…
3. Add garlic, cook until golden add celery and carrots cook for 3-5 minutes, add onions cook for approx 5 minutes add tomato paste and cook for approx 5 minutes stirring occasionally. Add the cooked ground beef back to the pan.
4. Add red wine and deglaze, reduce by half
5. Add crushed tomatoes & chicken stock, season with salt and pepper, add the fresh herbs, bay leaves and chili pepper flakes, let simmer for approx 30 minutes, add ½ pint of milk, simmer for 1 hour followed by other ½ pint of milk and simmer for 1 hour.
6. Bring a pot of water to a rapid boil and season with salt.
7. Cook your pasta (rigatoni) until it is al dente.
8. Reserve some of the pasta water to use to finish the sauce.
9. Combine your cooked pasta with the bolognese and add some of the starchy pasta water. Toss together and add a drizzle of olive oil.
10. Finish with grated parmesan cheese and some chopped parsley.

Ingredients
Makes about 10-12 slices
3 pounds (1.5kg) turkey breast, boneless, skinless
Salt and freshly ground black pepper
Cranberry Spinach Stuffing
3 cups (150g) bread, cut into small cubes
2 tbsp (30g) butter
1 small onion (90g), finely chopped
1 celery stalk (60g), finely chopped
2 cloves garlic (5g), minced
2 oz (60g) baby spinach
1 tbsp fresh parsley, chopped
1 tbsp fresh thyme
1 tbsp fresh sage,chopped
1 small egg, beaten
1/2 cup (120ml) chicken stock
Salt and freshly ground pepper, to taste
1 oz (30g) dried cranberries
For topping
2 tbsp (30g) olive oil
Salt
freshly ground black pepper
Red chili flakes and herbs mix
For the gravy
pan drippings
1 cup (240ml) chicken stock
1 tbsp (10g) flour
