Inspired by a New England favorite, Jordan Marsh Blueberry Muffins but we made them with Power Berry Blend!
Ingredients: 1 stick of butter 1 cup sugar 2 large eggs 2 cups flour 2 tsp. Baking powder 1/2 tsp. Salt 1 1/2 tsp. Vanilla extract 1/2 cup milk 2 1/2 cups Power Berry Blend (do not thaw) Sugar for topping muffins
Preheat oven to 350 degrees F. Prepare muffin tin with liners In a large mixing bowl, cream together butter and sugar. Add one egg at a time and beat in between. Mix well. In a separate bowl, combine flour, baking powder and salt. Slowly pour dry ingredients into egg mixture. Add vanilla extract and milk. Mix to combine all ingredients well. Fold in frozen Power Berry Blend. Using a spatula spoon batter into prepared muffin tin. (You’ll likely need to use your hands or another spoon as the batter is thick!)
Bake for 30-35 minutes or until edges begin to brown and center is cooked through.
