How To make Campfire Potatoes
5 medium Potatoes, peeled
thinly sli
1 medium Onion :
sliced
6 tablespoons Butter or margarine
1/3 cup Cheddar cheese shredded
2 tablespoons Fresh parsley :
minced
1 tablespoon Worcestershire sauce
Salt and pepper to taste 1/3 cup Chicken broth
on a large piece of heavy-duty foil with butter. Combine the cheese, parsley, worcestershire sauce, salt and pepepr; sprinkle over potatoes. Fold foil up around potatoes and add broth. Seal the edges of foil well. Grill, covered, over medium coals for 35 to 40 minutes or until potatoes are tender.

Campfire Cooking | Loaded Foil Pocket Potatoes
These are going to be your go to campfire side dish any time you go camping now, I guarantee it! Super easy & insanely delicious these loaded foil pocket mashed potatoes have all the rich savory decadence youd expect from your momma's mashed potatoes but camp fire edition! I'm gonna probably do these at home on my own grill sometime too! As always, like the video & thank you so much for cooking with me today, we went and made something great, again!
Foil Pocket Potatoes:
*NOTE* You're camping! Cook as many or as little as you need & use my video as a guide, I'd say it was roughly 2 large potatoes we used per each foil pocket. Play around with it, add other things, whatever you want. Thats the best part about cooking. Anyway, here's the process I took while making these!
-Slice Potatoes into roughly 1/4 inch whole slices. (Like potato chips!)
-Rip out THREE pieces of *HEAVY DUTY* Aluminum foil, about a foot to 18 inches long.
-Stack three layers of foil on top of each other & then arrange potatoes on 3rd layer.
-Slice about 1 to 2 TBSP of butter thin and arrange all over potatoes
-Generously sprinkle with Montreal Steak Seasoning (or whatever you desire about 2 TBSP)
-Wrap potatoes as shown in video. Fold long ways first, pinch together & roll down to form an air tight seam. Then tightly roll up ends to form pocket. Flip it over & repeat with rest of foil.
-Place in whatever area you deem the hottest of your campfire, they all vary!
-Rotate about every 10 minutes. Should take upwards of 20~ ish minutes to cook through.
-After 20~ minutes, unwrap carefully, and mash potatoes around with spoon.
-Add 1 to 2 TBSP of sour cream, a generous grab of your choice of cheese & a pinch more seasoning. Re-wrap as best you can and return to fire for about 5 to 10 more minutes.
-Remove, open carefully, and stir that deliciousness together. Top with scallion & crispy bacon pieces!
-Enjoy!
