Recipe
1 lb. Hamburger meat
½ white onion diced
½ red bell pepper diced
¼ green bell pepper
2 cloves garlic chopped
2 Serrano peppers seeded and diced small
1 can Red Gold petite diced tomatoes any flavor
1 cup corn
1 ½ teaspoons salt
2 tablespoons ground chili powder
1 teaspoon cumin
1 cup broth I used bone broth
1 cup shredded cheddar cheese hold back ¼ cup for corn bread
In a medium skillet, brown the hamburger meat, add the salt cook about 3 minutes. Drain meat if necessary. Add remaining vegetables. Red bell peppers, green bell peppers, garlic and the serrano peppers. Sauté until translucent. About 3 minutes. Add the chili powder and cumin. Add tomatoes and broth. Let simmer about 10 minutes.
Corn bread topping
1- 6 oz package of Yellow cornbread mix, prepare according to package instructions. Add ¼ cup cheddar cheese.
In a 9-inch pie plate add the filling mixture top with the cheddar cheese. Then pour the corn bread mixture on top. Make sure to place pie plate on top of a cookie sheet. It might boil over a little.
Bake at 375° for 40 minutes. Let cook about 30 minutes then ready to serve and enjoy.

Ingredients
5 c. riced cauliflower (from about 1 large head)
2 c. shredded Monterey Jack, divided
1 1/2 c. shredded cheddar, divided
1 egg
1/2 tsp. dried oregano
kosher salt
Freshly ground black pepper
1 tbsp. extra-virgin olive oil, plus more for pan
1/2 onion, chopped
2 cloves garlic, minced
3/4 lb. ground beef
1 tsp. chili powder
1/2 tsp. ground cumin
1 1/4 c. enchilada sauce
1 c. canned black beans, drained
1 c. canned corn, drained
3 green onions, thinly sliced
Sour cream, for serving
Directions
1. Preheat oven to 425°. In a large microwave-safe bowl, microwave cauliflower until softened, about 4 minutes. Set aside until cool enough to handle, then use a clean kitchen towel to squeeze and ring out out excess moisture.
2. Transfer steamed cauliflower to a clean bowl then add 1 cup shredded Monterey jack, ½ cup cheddar, egg, and dried oregano. Season with salt and pepper and mix until combined. Grease an ovenproof 10” skillet with olive oil, then press the cauliflower mixture into skillet. Bake until golden and dried out, about 20 minutes.
3. Meanwhile, in a large skillet over medium heat, heat olive oil. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minutes. Add ground beef and cook, stirring often, until the beef is cooked through, about 6 minutes. Drain fat, then add chili powder, ground cumin, enchilada sauce, black beans and canned corn and bring mixture to a simmer. Season with salt and pepper then turn off heat.
4. Spread mixture over baked cauliflower crust then top with remaining cheeses. Bake until the cheese has melted and the crust is crispy, about 15 minutes more.
5. Garnish with green onions and serve warm.

2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
2 eggs
2/3 cup milk, divided
4 ounces shredded Cheddar cheese, divided
4 ounces shredded Monterey Jack cheese, divided
8oz frozen corn (thawed)

Mom's Tamale Pie Recipe
Meat mixture
-1 tablespoon oil
-1 small onion, diced
-1 jalapeno, minced
-2 cloves garlic, minced
-7ozcan diced green chilies (use half for meat mixture and reserve half for cornbread)
-salt and pepper to taste
-2 tablespoons Guajillo chili powder
-2 Tablespoons flour
- lb ground beef
-1 packet taco seasoning
-1 cup water
Heat oil in skillet; saute onions for about 7 minutes; add jalapeno and cook for 3 minutes. Add garlic and green chilies; salt and pepper to taste. Add Guajillo chili powder and cook 1 minute. Add ground beef; crumble and brown. Add flour and taco seasoning; cook 1 minute. Add water and lower heat to low and simmer 10 minutes.
Cornbread Batter
-1 cup cornmeal
-1/2 cup flour
-1 tablespoon baking powder
-2 tablespoon sugar
-1/2 teaspoon salt
-1 egg
-1 tablespoon oil
-14 oz can cream of corn
-1/2 cup milk
-reserved half of can green chilies
-1/2 cup shredded cheddar cheese
Mix all ingredients together in bowl.
Place half of cornbread batter into greased 11 x 7 inch pan; add meat mixture; top with additional 1 1/2 cups shredded cheddar cheese and finally remainder of cornmeal batter. Bake in preheated 400 degree oven for 25 minutes. Allow to sit for 10 minutes before serving. Top with spoonful of sour cream and cowboy candy if desired. Enjoy!!!
