COCONUT FIG BARS : HEALTHY, VEGAN & GLUTEN FREE
Hello friends! Hope everyone is doing great!
Today I am sharing with you the recipe to these Coconut Fig Bars. As usual, they are Gluten Free, Vegan, and of course, refined sugar free! This dessert can stay in the freezer for a very long time, so it is great to make ahead of time and defrost whenever you have guests over or your craving something sweet! You can also make these in any shape or size. Instead of bars, make it into a full cake... why not!!
FIG BASE INGREDIENTS:
1) 1 Cup Hazelnuts
2) 1/2 Cup Almonds
3) 4 Tbsp Flax Seeds
4) 4 Tbsp Coconut Shreds
5) 1 and 1/2 Cup Dried Figs (remove the end pieces)
6) 1/2 Cup Dates (Remove seeds)
7) 1 Tbsp Water
8) 1 Tsp Cinnamon
COCONUT CREAM INGREDIENTS:
1) 1 Cup Cashews (Soaked overnight or for at least 8 hours)
2) 1 Cup Coconut Cream
3) 2/3 Cup Coconut Shreds (You may add more for stronger coconut taste)
4) 4 and 1/2 Tbsp Maple Syrup or other natural sweetener
5) 1 Tsp Vanilla
DIRECTIONS:
** Soak up your cashews for at least 8 hours or overnight before making this recipe **
Step One: Soak the dates and figs in warm water for about 15 minutes to soften them. In the meantime, blend the hazelnuts and almonds in a blender or food processor.
Step Two: When the dates and figs are ready, add them to the blender or food processor, as well as the flax seeds, coconut shreds, water and cinnamon. Blend until everything is combined and the mixture is sticky.
Step Three: Wrap your pan with plastic wrap. I used a 13 by 9 inch baking pan.
Step Four: Pour your base layer into the pan and press it down firmly. If your mixture it to sticky, you may wet your spatula or fingers and it will help not to stick. Once your base is leveled, put it in the freezer while you make the Coconut Cream.
Step Five: Blend the cashews in a blender or food processor.
Step Six: Add the remaining ingredients into the blender or food processor (Coconut Cream, Coconut Shreds, Maple Syrup & Vanilla) and blend.
Step Seven: Pour the Coconut Cream mixture onto the Fig Base.
Step Eight: Freeze the bars for about 2 hours.
Step Nine: Decorate the bars with thinly sliced fresh figs. If the bars are still to soft, add it back into the freezer. It is easier to cut into your desired shape and size, when they are more firm.
Step Ten: Remove from plastic wrap, cut and enjoy!

Date Energy Balls / Healthy Date Energy Bites / Energy Balls / Easy Energy Balls Recipe
Date Energy Balls are truly energetic, nutty, and super delicious. They are naturally sweetened, full of dates and nuts, along with chia seeds. Date energy bites are healthy, instantly lifts the energy level, and simultaneously satisfy the sweet tooth. These energy bites are perfect for before or after workouts.

Ingredients:
2 cups (about 15-16) Medjool dates pitted
1 cup mixed nuts (Almonds, Cashews, Walnuts)
2 tbsp cocoa powder
1 tbsp chia seeds
A pinch of sea salt
Notes:
Mixed Nuts: We need to use 1 cup of mixed nuts in total. I have used the nuts, which I prefer. But you can replace either one with your choice of nuts.
Dates: Medjool dates are my favorite. They are more naturally sweetened than other varieties. Also, they are large, juicy, and very soft. But you can use your favorite dates.
For Hard/Dry Dates: Soak hard or dry dates in warm water for at least 15-20 minutes. And drain them well before using them in the recipe.
Toasting The Nuts: Lightly toasted nuts are more flavorful than raw. And so I prefer toasted nuts over raw. But toasting nuts is optional; you can skip that step and use raw nuts in the recipe.

Coconut Almond Energy Bites
Jamie, from the Ormond Beach Regional Library, demonstrates how to make an easy and tasty snack for when you are on the go, coconut almond energy bites!
Recipe:
Ingredients:
3/4 cup of old fashioned oats
1/4 cup almonds, chopped
¼ cup of chocolate chips
2/3 cup of peanut butter
¼ cup shredded coconut
½ cup of chia seeds
2 Tbsp. of honey
Instructions:
1. Combine all ingredients in a large bowl and stir to combine.
2. Refrigerate for 15-30 minutes to make it easier to form the bites.
3. Form into balls (it should make 12).
4. You can store them in a sealed container in the refrigerator for one week.
