How To make Cabbage and Apple Casserole
4 oz Bacon, sliced, cut crosswise
-into 1/2" bieces 2 tb Butter, sweet
1 tb Oil, vegetable
1 Onion, finely chopped
1 Small head RED Cabbage,
-cored, coarsely shredded -(about 6 cups) 2 Granny Smith apples, pared,
-cored, cut into 1/4" dice 1/2 c Cream, heavy
2 tb Brandy or Cognac
1/2 ts Salt (or to taste)
1/4 ts Pepper, freshly ground
-or to taste Fry bacon in medium skillet over medium heat until slightly crisp and brown, about 10 minutes. Remove to paper towels to drain. Heat butter and oil in medium casserole or Dutch oven over medium heat. Add onion and cook stirring ocasionally, until softened, about 5 minutes. Add cabbage and continue to cool until softened, 3-5 minutes. Add bacon, apples, cream, and brandy and stir to combine. Simmer uncovered, stirring occasionally, about 10 minutes. Season with salt and pepper to transfer to serving dish. Serve hot.

You may never find a better recipe for cabbage casserole than this one. Chef Frank Davis made this famous many years ago in the kitchen of WWL TV in New Orleans. Since then, I've made this many times. In fact, I've given this recipe to many people who now consider Cabbage Casserole a staple in their kitchen.
This time, I recreated this awesome recipe using a good Italian Sausage in place of ground pork. It worked!

Cabbage Casserole
Ingredients
1 pound lean ground beef 90/10
1 pound loose Italian Sausage
1 cabbage.. course cut into 1” squares. Not shredded
1 yellow onion diced
1 red onion diced
1 bell (green) pepper diced
2 ribs celery chopped
6-8 toes garlic diced
1/4 cup fresh parsley (Italian or curly leaf)
1/2 stick unsalted butter
3 to 4 tbsp olive oil
1 – 6 ounce can tomato paste
1- 15 oz can tomato sauce
1 – 10 ounce can Rotel Tomatoes Original flavor
Salt / Pepper
2 Tbsp. your favorite Vegetable seasoning
1 Tbsp. oregano
2 Tbsp. Italian Blend seasoning
1 1/2 cups Uncle Bens Instant rice.
2 cups parmesan cheese.
INSTRUCTIONS
Providing you've cut up all your seasonings and cabbage... you are ready to start. Remember, Mise en place. Everything in it’s place before starting to cook.
In a large pot.. 7 quart or larger, melt butter and add olive oil using a med/high heat. When you see a hint of smoke, add in all veggies and sauté for 5-7 minutes.
Add in your ground beef and Italian sausage. Chop up the meats and fold together with veggies until all meats are cooked.
Next, add in your Rotel tomatoes, tomato sauce and tomato paste. Stir well..
Add Italian Blend seasoning, oregano, vegetable seasoning and pork seasoning. Finish up seasoning with salt and pepper to taste.
Once your sauce tastes great, it’s time to add in the cabbage.
Fold as much cabbage into your meat sauce as your pot will allow. If you cannot add all the cabbage at once, add as much as you can, fold it into the meat sauce and cover for 2 minutes on low / med heat. After 2 minutes stir and cover. Uncover and add more cabbage. Do this until you get all cabbage in pot. Cook and stir for approx. 8-10 minutes.
Once cabbage is cooked the way you like, add in the instant rice.
Fold in rice very well and cover. Turn heat off and leave covered for 12 minutes so the rice can hydrate.
Serve while hot.
This step is optional:
Transfer cabbage into a casserole.
Add a layer of Italian bread crumbs and Parmesan cheese.
Bake in a 400 degree oven for 10 minutes or until cheese is browned. Serve with love...
Chef’s Notes: I used no salt or black pepper because the vegetable seasoning had both. It was salty enough.
I used a Le Creuset 12 qt. Dutch oven.

Healthy Cabbage Casserole
Ingredients for one 2-quart baking dish (about 4 servings as a main course; 8 servings as a side dish)
1/2 of a medium-size head of cabbage (about 500g)
1/2 to 3/4 teaspoon salt
4 large eggs
1/4 cup (58g) mayonnaise
1/4 cup (62g) sour cream or plain yogurt
1/4 cup (30g) all-purpose flour or a gluten-free substitute
1 teaspoon (4g) baking powder
1 teaspoon (4g) cornstarch
A pinch of black pepper
4 ounces (112g) or more finely-shredded Swiss cheese
Directions:
Preheat oven to 350°F (177°C).
Preparing the Cabbage -- Thinly slice the cabbage (as for coleslaw), and place it in a large bowl. Sprinkle with 1/2 to 3/4 teaspoons of salt. Mix with hands, and then massage the strands until they weep moisture and soften up -- about 30 seconds. Pour the cabbage into a greased 2-quart baking dish, and let it rest there for 5 minutes. Meanwhile, make the batter.
Making the batter -- Whisk the eggs in a medium bowl. One ingredient at a time, whisk in the mayonnaise and the sour cream (or yogurt). Add the flour, baking powder, cornstarch, and pepper. Whisk until fairly smooth -- about 30 seconds.
Assembling -- Pour the egg mixture over the cabbage. Stir with a spoon or spatula until all of the cabbage is coated. Sprinkle the cheese over the top of the casserole.
Baking -- Bake in the preheated oven until the casserole puffs and the cheese melts and turns spotty brown -- about 50 minutes.
Serving -- Allow the casserole to cool for at least 15 minutes, and then cut it into serving pieces. The casserole is delicious at any temperature -- even cold from the fridge!

Thick Cut Bacon (5-6 slices)
1 Onion
1 tsp Better than bouillon Chicken Base
1 tsp white sugar
1-2 tbsps apple cider vinegar
smoked paprika
1/2 packet Sazon
salt, pepper, garlic, onion powder
Cayenne Pepper
Worcestershire Sauce
1 tbsp butter
1 tbsp garlic paste
Directions:
Begin by removing the core of the cabbage and slicing it into your desired thickness. Dice your onion and chop the bacon as well. Over medium heat, fry the bacon until crispy and remove with a slotted spoon. In the same pan, add your onions and cook for 3-4 minutes or until they start to get tender. Next, add your garlic and cook for 1-2 minutes. Add your cabbage and mix to combine. Season to taste with listed seasonings and add in your worcestershire, sugar, and vinegar. Add butter and cover the pan with a lid and cook for 10 minutes on low. Cook, covered, checking occasionally, until cabbage is tender. Taste as you go and adjust the seasoning as needed. Add your bacon once the cabbage is tender and mix to combine. You can add sausage to this as well.
