INGREDIENTS
CAKE:
1 Betty Crocker Butter Pecan cake mix
1 cup water
¾ cup oil
4 large eggs
1 15.5 oz container Betty Crocker Coconut Pecan Frosting
1 cup chopped pecans
INGREDIENTS
GLAZE:
2 Tbs salted butter
1 cup chopped pecans
1 small can (14 oz) sweetened condensed milk
Combine cake ingredients in mixing bowl. Pour prepared batter into a well-greased 13x9 inch cake pan. Bake in Preheated 350 degree oven for 35-40 minutes.
While cake is baking, prepare glaze by adding butter, pecans, and condensed milk to a small saucepan. Heat over medium-low heat, stirring frequently until very hot. Do not allow mixture to boil. Set aside.
Remove cake from oven and allow to cool for five minutes. Using a fork, chopstick, or spoon handle, poke holes all over cake surface. Pour warm glaze over surface of warm cake and spread around to cover surface evenly and fill holes. Allow glazed cake to cool completely before cutting.

Butter Pecan Banana Bread
This 80 year old blue ribbon banana bread recipe won the Kansas State Fair twice, and a Sweepstakes too! Kansas, the breadbasket of America, has always been a USA leader in baking. Back in 1987 I discovered this most popular Pecan Banana Bread recipe in an heirloom Reno county publication and have tried hundreds of others since, but this is still the best Banana Bread Recipe of all!
The use of buttermilk gives it almost a cakelike lightness, but it's still a moist chewy bread. Using half butter and half shortening, and toasting the pecans, gives a deep butter pecan essence to the rich banana oil flavor. There are no aromatic spices to detract from the pure deliciousness of the main ingredients, bananas and pecans. It's not overpoweringly sweet from loads of white sugar, it's the natural sugar of the bananas that lingers in memory long after your slice quickly disappeared! Moist but not heavy it slices like bread and chews like cake, just the perfect banana bread!
It gets even better in the refrigerator and freezes well. Another one where The Taste Tells The Tale, this is a really easy, quick and DELICIOUS superstar recipe you should make!

Ingredients
3 cups plus more for dusting cake pans self rising flour
3 sticks at room temperature, divided butter
2 cups granulated sugar
4 large eggs
1 cup milk
3 tablespoons plus 1 teaspoon butternut extract
1 cup chopped, plus 1/2 cup unchopped pecans
4 cups confectioner's sugar
1 (8 oz) package at room temperature cream cheese
Preperation
For the cake:
1. Preheat the oven to 350 °F. Adjust the racks to the middle of the oven. Spray three 9-inch cake pans with nonstick spray and dust lightly with flour.
2. Using a stand mixer, cream 2 sticks of butter until fluffy. Add the granulated sugar and continue to cream well for 6 to 8 minutes.
3. Add the eggs, one at a time, beating well after each addition. Add the flour and milk alternately to the creamed mixture, beginning and ending with the flour. Add 3 tablespoons extract and continue to beat until just mixed. Then fold in 1 cup chopped pecans. Divide the batter equally among the prepared pans. Level the batter in each pan by holding pan 3 or 4 inches above the counter and dropping it flat onto the counter.
4. Bake until golden brown, 30 to 35 minutes. Cool the cakes completely before frosting.
For the frosting:
1. Add the confectioners’ sugar to a bowl and whisk to make sure there are no lumps. Set aside.
2. In a large bowl, blend together the cream cheese and 1 stick butter with an electric hand mixer.
3. Gradually add the confectioners’ sugar and beat until light and fluffy. Beat in 1 teaspoon extract.
4. Stir in 1/2 cup pecans (or reserve them to sprinkle over the frosted cake). Fill and frost the cake when the layers are completely cool.
