How To make Burgundy Meat Ball Stew
2 c Ground Beef
1 c Fine Soft Breadcrumbs
1/4 c Onions, finely chopped
1 x Egg
1 1/2 ts Salt
1/4 ts Pepper
1/4 ts Thyme
1 tb Butter
1 tb Oil
1 cn 14oz Tomato Sauce
1 cn 10oz Beef Bouillon
1 c Dry Red Wine
1 c Water
8 x Onions, halved
2 cl Garlic, minced
4 x Medium Potatoes, cubed
4 x Medium Carrots, 1" chunks
Salt and Pepper 1/2 lb Small Mushrooms (optional)
Parsley, chopped 1 tb Cornstarch OR
2 tb Flour
1) Combine beef, crumbs, onion, egg, salt, pepper, thyme. Shape into
1 1/2" meatballs.
2) Heat butter and oil in skillet. Brown meatballs lightly on all
sides. Drain excess fat. 3) Combine meatballs with remaining ingredients in dutch oven. (May be
refrigerated at this point). Cover and bake about 45 minutes at 350 F

Beef Bourguignon is a classic, French beef stew. Our version includes bacon, mushrooms, and red wine. The beefy chunks of Chuck or English Beef Roast become tender during a slow cooking process. Serve beef bourguignon over rice or other noodles.

3 pounds Certified Angus Beef ® English roast, cut into 3/4-inch cubes
4 slices thick-cut bacon, cut in 1/4-inch wide strips
1 teaspoon coarse kosher salt
2 tablespoons canola or light olive oil as needed
8 ounces crimini mushrooms (baby bella), sliced fresh
1 large onion, chopped
2 tablespoons all-purpose flour
1 teaspoon dry thyme
1 teaspoon freshly ground black pepper
1 cup red wine
2 cups beef stock
3 cups cooked brown or wild rice blend
2 tablespoons chopped fresh flat-leaf Italian parsley, optional

2 ½ pounds Chuck Roast (cut into bite sized pieces)
2 onions
3-5 cloves of garlic
1 bottle of guiness stout beer (or beef broth)
2-3 tbsps tomato paste
3 tbsps all purpose flour
Fresh Thyme, rosemary, and bay leaves
2-3 carrots
2-3 stalks celery
1 tbsp brown sugar
2 ½ cups chicken stock, or as needed to cover
salt, pepper, garlic, onion powder, cayenne pepper

INGREDIENTS WITH GRAM AMOUNTS
For the stew
1/2 pound (226g) thick cut bacon - cut into 1 pieces
3 pounds (1360g) beef chuck - trimmed of fat and cut into 2 cubes
1 large white onion - chopped
2 large carrots - cut into 2 chunks
6 cloves garlic - minced
1/2 cup (60g) flour
8 sprigs thyme - tied together
3 cups (720g) burgundy or other dry red wine
2 large bay leaves
3 cups (720g) low sodium beef stock
1/4 cup (50g) tomato paste
salt and pepper - to taste
For finishing
4 tablespoons (56g) butter
2 tablespoons (28g) olive oil
16 pearl onions
1 pound (454g) cremini mushrooms - quartered
3 tablespoons flat leaf parsley minced
2 teaspoons fresh thyme leaves
salt and pepper - to taste
