I've been thinking about these Buñuelos since April! These are so good! Buñuelos are basically fried flour tortillas, either covered in cinnamon sugar or dipped in a piloncillo, or sugar cane, syrup, like this! This is another Mexican staple around Christmastime and surprisingly easy to make!

TORTILLAS:
½ cup warm water
½ teaspoon baking powder
½ teaspoon salt
2 cups flour
1 tablespoon butter
2 tablespoons sugar
1 egg
½ teaspoon ground cinnamon
SYRUP:
½ cup sugar
1 stick cinnamon
2 piloncillo/sugar cane/jaggery cones
2 cups water

BUNUELOS MADE EASY: Delicious Simple Recipe for Buñuelos with No Eggs Added
There's different ways to make Buñuelos, but there's nothing fancy about this particular recipe. These are simple, made with pantry staples you likely already have on hand, and they're delicious. Buñuelos are especially popular around the holidays because they're lightly sweet, and crispy, and overall a wonderful treat. Read on for the easy recipe.
Buñuelos
2 cups of flour
1 tsp. baking powder
2 tsp. sugar
a couple of dashes of cinnamon
pinch of salt
2 Tbsp. of fat (shortening, oil or butter)
1 cup of warm water (you may not use it all)
vegetable oil for frying
Plus cinnamon sugar for dusting at the end. (approx. 1 cup sugar mixed with 1 Tbsp. cinnamon)
In large bowl, mix together dry ingredients: flour, baking powder, sugar, a little cinnamon, and a pinch of salt. Then cut in fat and break up until you have a sandy consistency. Add in warm water a little at a time until you form a dough. Knead for a minimum of 10 minutes. Then cut into 6 even pieces and roll each into a ball. Place back in bowl and cover with a slightly damp kitchen towel. Let dough rest 30-40 minutes, then heat a large skillet with enough oil for deep frying. (Oil should be 350º) Then with a rolling pin, roll out each dough ball into a round disk that's a thin as possible (similar to a tortilla). Carefully lay dough into hot oil and fry for 30 seconds on each side. Place on rack lined with paper towels to allow excess oil to drain. And while still hot, dust both sides of buñuelo with plenty of cinnamon sugar. Shake off the excess and enjoy while hot.

Learn how to make traditional Mexican Buñuelos with this easy and simple recipe. ????
Ingredients:
2 Cups All Purpose Flour (280g)
1 Teaspoon Baking Powder (5g)
1 Tablespoon Vanilla Extract (15ml)
1 Tablespoon Melted Butter (15ml)
2 Eggs
Warm Water
2 Cups Corn or Vegetable Oil
1/4 Cup Sugar (48g)
2 Teaspoons Cinnamon Powder (6g)
Directions:
1. In a mixing bowl, whisk together the flour and baking powder. Make a fountain at the center of the dry ingredients and add to it the vanilla, butter, and eggs. Stir together until moist. Gradually add a little warm water, 1 tablespoon at a time, until a soft and elastic dough forms. Cover dough and let stand at room temperature for 30 minutes.
2. Divide dough in half. Roll out as thin as possible. Use a plate about 7 inches wide to trace around and cut out circles from the dough.
3. In a pan, heat oil over low heat. Drop a small piece of dough into oil to test if it is hot. If the oil starts to bubble around the dough, it is ready. Carefully drop each disk into the oil. Cook each side until it is golden brown, about 1 to 2 minutes. Transfer each buñuelo onto paper towels to let drain.
4. Combine the cinnamon and sugar in a plate or bowl. Sprinkle and rub the cinnamon sugar onto both sides of each buñuelo while still warm. Serve buñuelos warm or at room temperature.

Christmas time comes with so many traditional dishes, and Buńuelos are on the top of the list for me, it’s the perfect ending to any meal. Buñuelos are a quickly fried tortilla disk then sprinkled with a combination of cinnamon and sugar. Syrup is the perfect addition to the buñuelos, you can drizzle it or you can break your buñuelo apart then dunked in the delicious syrup made out of piloncillo (compressed brown cane sugar) and cloves, cinnamon, star anise, orange and lemon rind and water.
