3 1/2 oz Buchwheat Flour
3 1/2 oz Almonds,ground
4 Egg Yolks
6 oz Sugar
2 ts Baking Powder
4 Egg Whites
9 oz Cottage Cheese,pureed
12 oz Cranberries,canned
15 oz Heavy Creme
6 ts Gelatine,ground
1.Cream eggyolks and sugar until foamy, mix in flour, almonds and baking
powder. 2.Beat eggwhites to a stiff snow and fold in;Fill the mix into a springform and bake at 225 C for 10- 15 minutes. 3.Mix cottage cheese and cranberries.Whip the cream until stiff and fold in. Dissolve gelatine in water as directed on package than fold into cheese mix. 4.When the crust is cooled, cut one time diagonal and fill with half of the cheesemix and spread the rest on top. 5.Cool well before serving. What is Buckwheat flour?
Even though buckwheat has the word wheat in its name, it is not wheat flour. The buckwheat seed is part of the rhubarb and sorrel family, the buckwheat kernel is actually the seed of a flowering fruit.
Buckwheat is one of the healthiest, nuttiest, and most versatile whole grains. It is a wheat-free and grain-free flour so it is naturally gluten-free. It looks a little greyish-greenish. Most brands mill their flour so it is okay for baking. Meaning it is good and texturally pleasing.

Italian Buckwheat Flour Cake: gluten-free (torta di grano saraceno)
This Italian buckwheat flour cake (gluten-free) is a nutty sponge-like cake filled with jam between the layers. Traditionally this buckwheat flour cake is from the Alpine region of Italy where the locals speak German. The name in German is Buchweizentorte and in Italian; Torta di Grano Saraceno, this is one of the most famous cakes in the area (alto Adige), a nutty buckwheat sponge filled with berry jam (usually raspberry, blueberry or blackcurrant).
This buckwheat recipe can be made with ground almonds or ground hazelnuts and in true Italian style sprinkled with a veil of icing sugar. To achieve the perfect moist buckwheat flour cake I have made this cake both with Greek yoghurt or a grated apple depending on what I have on hand.
I love this cake as a breakfast cake or an afternoon treat.

Makes = 20cm round
