This is my take on a classic, comforting Southern stew featuring pork, chicken thighs, and lots of veggies. This meaty soup can be made with any and all meats, and is a perfect catchall for seasonal vegetables. Enjoy!

Old Fashioned Brunswick Stew is a Southern Thing. It is comprised of many vegetables and spices. Beans is another option in the place of the meat. Brunswick Stew can be made with chicken, ham, beef, squirrel, rabbit, and pork. I prefer chicken. Vagi is, North Carolina, and Georgia has put their claim on the old- fashioned stew. Brunswick County is located in Virginia. The City of Brunswick is in Georgia. Eastern North Carolina stew has potatoes which causes the thickness. This is why I added fresh white potatoes, because this is how I like it. I’m originally from North Carolina but presently living in the big city of New York. Some things never change, like my Southern accent, hospitality, and food!

Old Fashioned BRUNSWICK STEW! DELICIOUS Recipe From 1968!
This old fashioned Brunswick stew comes from the New Casserole Cookery which is from 1968. This recipe calls for a whole cut up chicken but I used chicken leg quarters. You can take the chicken out of the stew after it’s done cooking, let it cool down a bit, then take it off the bone, shred it, and add it back into the stew if you like.
1 3 1/2lb chicken, cut up
4 TBSP bacon fat or butter
½ cup chopped onion
1 ½ cup fresh corn cut from the cob or 1 10oz package frozen cut corn or 1 12oz can corn
1 cup fresh shelled lima beans or 1 10oz package frozen lima beans
2 ½ cups diced fresh tomato or 1 20oz can diced tomato
2 cups bouillon (I used chicken)
1/3 cup finely chopped parsley
1 bay leaf
½ TSP thyme
1 TSP Worcestershire sauce
Salt, peppercorns
4 slices cooked bacon, crumbled
Brown the pieces of chicken in bacon fat or butter and set aside. Sauté onion in fat until soft. Put chicken, onion, tomatoes, lime beans, corn, bouillon, and seasonings in a casserole dish, bake, covered, in a preheated 350F oven for 35 minutes or until chicken and lima beans are done (mine took a lot longer, keep an eye on it). Add bacon and cook for 5 to 10 minutes more. The recipe says “this will wait gracefully). Serves 4 to 6. 1 ¼ hours.
