How To make Brunswick Stew1
1 pound chicken
3 quarts water
1 large onion
1/2 pound ham
lean :
in small piece
2 pints tomatoes
1 pint lima beans
4 large Irish potatoes diece
1 pint corn :
grated
1 tablespoon salt
1/4 teaspoon pepper
1 red pepper
3 ounces butter
Cut up a pound of Chicken and put it in a large pan with three quarts of water, one large onion, one half pound of lean ham cut into small pieces and simmer gently for two hours. Add three pints of tomatoes, one pint oflima beans, four large Irish potatoes diced, one pint of grated corn, one tablespoon of salt, one fourth teaspoon pepper, a small pod of red pepper. Cover and simmer gently for one more hour stirring frequently to prevent scorching. Add three onces of butter and serve hot. Note: ----- This makes a lot of stew. You will probably want to half or even quarter it, if want to try it before serving it to a group.

Making homemade Brunswick Stew!!
Brunswick Stew
When it comes to a HEARTY stew or a no-brainer side dish for a barbecue meal, It's hard to ignore the power of BRUNSWICK STEW! This is super easy to make but there are a few things I believe are important for making it AWESOME! Here are the ingredients:
2 pounds of cooked meat (pulled pork, chicken, brisket, chuck, or any combination of these)
1 28oz can of crushed tomatoes
1 14oz can of chicken broth
3 medium red potatoes, diced
1 medium yellow onion, diced
12oz bag of frozen whole kernel corn
12 oz bag of frozen baby lima beans
16-18 oz bottle of your favorite barbecue sauce (see notes)
1/4 cup brown sugar
1 tablespoon of your favorite barbecue rub (See notes)
1 teaspoon salt
Preheat your grill to 275° and setup for indirect cooking.
Combine all the ingredients in a large dutch oven and stir to mix completely. Place the dutch oven on the grill without the lid for about an hour. After an hour, stir the stew, place the lid on and let it cruise for another 90 minutes or so. Taste and see if you need or want any additional salt. Remove from grill, let cool slightly, and serve!
Notes:
I believe this stew needs to be made with a SWEET barbecue sauce and rub. Kansas City or Western NC style barbecue sauces are perfect for this. That also means that a sweet rub works best here also. Any rub that you would typically use on a pork butt would work well here.
This stew can also be modified easily to use whatever veggies you have on hand. As I stated in the video, I would normally add okra to this as well. Feel free to make it YOURS by changing up any part of the recipe.
