1/2 c Margarine or butter; -softened 1 pk Cream; (3 ozs) Cheese; softened 3/4 c All-purpose flour* 1/4 c Powdered sugar 1/2 ts Vanilla 3 oz Semisweet chocolate 1 tb Margarine or butter 1/3 c Granulated sugar 1/4 c Chopped walnuts 1 Egg *self-rising flour can be -used 1 This recipe. Recipe by: Betty Crocker's Cookbook Mix 1/2 cup margarine and the cream cheese. Stir in flour, powdered sugar and vanilla. Cover and refrigerate at least 1 hour. Heat oven to 325 degrees. Pat scant 1 tablespoon dough in bottom and up side of each of 24 small muffin cups, 1-3/4 X 1 inch. Heat chocolate and 1 tablespoon margarine over low heat until melted; remove from heat. Stir in remaining ingredients. Fill each muffin cup about two-thirds full with chocolate mixture (about 1-1/2 teaspoons). Bake about 25 minutes or until edges are light brown; cool. Remove cups from pan. 2 DOZEN COOKIES; 110 CALORIES PER COOKIE. -----

Best Mini Brownie Bites - 2 Bite Brownies Made Simple and Quick
These mini brownies are one of my addictions. I first found them two years ago in the grocery store and have been buying them ever since. They are often referred to as two bite brownies, as you can literally eat them in two bites. They make a great snack with a cold glass of milk and a great lunchbox idea for the kids.
As always, there are a few changes you can make to the recipe. For example, you can add nuts such as pecans or walnuts. Additional spices can be added too. Some cinnamon or nutmeg would not be out of place or some vanilla extract.

BETH’S TRIO OF SINISTER BROWNIE BITES Makes 5 dozen (in mini muffin tin)
INGREDIENTS: 12 oz (340 g) bittersweet chocolate 1 tbsp (15 ml) vanilla extract ¾ cup of butter 3 eggs 1 cup (200 g) of sugar ½ cup (60 g) of flour 1 tsp (5 ml) salt
Toppings: For Peanut Butter Swirl ½ cup (120 ml) peanut butter ( per dozen)
For Salted, Nutty Caramel ½ cup (75 g) chopped pecans +12 Lancaster Cream caramels + 1 tsp (5 ml) Fleur de sel sea salt (per dozen)
For Chocolate Chunk 2 ounces (56 g) bittersweet chocolate chopped into chunks (per dozen)
METHOD: Preheat oven to 350F (176C).
Melt chocolate and butter in a sauce pan on low. Allow to cool slightly.
In a medium size bowl whisk eggs and sugar together until smooth. Add vanilla, and salt. Mix until smooth.
Add chocolate mixture to egg mixture a little at a time to “temper” the eggs, then add all the mixture and whisk to combine.
Then add flour mixture, mix until smooth.
Scoop into mini muffin tin and add desired toppings.
Bake 7-9 mins. Allow to cool for at least 15 mins before moving.
