CREAMY BROCCOLI PASTA
We found this recipe on the WW app so we tried it out with our own twist.
Ingredients: Makes two servings
4oz chickpea pasta
1 oz cheese - we used .5 oz each of Parmigiano Reggiano and Pecorino Romano
Broccoli, about 3 cups
Garlic, 2 cloves
Rosemary
Thyme
1 Tbsp olive oil
Salt
Pepper
Red Pepper Flakes
Lemon
Directions:
1. Cook chickpea pasta following directions on package. Save pasta water for sauce later.
2. Steam broccoli until tender.
3. Grate 0.5oz each of Parmigiano Reggiano and Pecorino Romano. Save some for garnish at end.
4. Add olive oil to hot pan with garlic and cook until browned. Add red pepper flakes when the garlic is almost golden.
5. Combine olive oil/garlic/red pepper flakes in a bowl with 1/2 cup of pasta water, broccoli (save some to add whole to pasta later), cheese and juice of half a lemon. Blend together and season with salt and pepper to taste. Add more pasta water to reach desired consistency. Pro tip: use a stand alone blender!
We used a Hand Blender for this step.
6. Add chickpea pasta and reserved broccoli pieces to sauce and stir until combined.
7. Serve with cheese on top and a wedge of lemon.

Stir Fried Vegetables Pasta Recipe | Quick & Easy Pasta Recipe | Chef Sanjyot Keer
Full written recipe for Stir fried vegetables with pasta
Prep time: 10 minutes
Cooking time: 10-15 minutes
Serves: 3-4
For boiling pasta
Ingredients:
• Healthy Pasta 200 gm
• Water for boiling
• Salt to taste
• Black pepper powder a pinch
• Oil 1 tbsp
Methods:
• Set water for boiling, add salt to taste and 1 tbsp oil, when the water comes to roaring boil, add the pasta and cook for 7-8 minutes or until al dente (almost cooked).
• Strain the pasta and immediately, drizzle little oil and season with salt and pepper powder to taste, toss well to coat the salt and pepper, this step is done tonsure the pasta doesn’t stick to each other. keep aside until used for pasta. Keep little pasta water aside to be used later.
For stir frying
Ingredients:
• Olive oil 2 tbsp
• Garlic chopped 3 tbsp
• Ginger 1 tbsp (chopped)
• Green chillies 2 nos. (chopped)
• Veggies:
1. Carrot 1/3rd cup
2. Mushroom 1/3rd cup
3. Yellow Zucchini 1/3rd cup
4. Green Zucchini 1/3rd cup
5. Red bell pepper 1/3rd cup
6. Yellow bell pepper 1/3rd cup
7. Green bell pepper 1/3rd cup
8. Broccoli 1/3rd cup (blanched)
9. Corn kernels 1/3rd cup
• Salt & black pepper to taste
• Oregano 1 tsp
• Chilli flakes 1 tsp
• Soy sauce 1 tsp
• Cooked healthy pasta
• Spring onion greens 2 tbsp
• Fresh coriander leaves (roughly torn)
• Lemon juice 1 tsp
Methods:
• Set a wok on medium high heat, add olive oil, garlic, ginger and green chillies, cook for 1-2 minutes.
• Further, add carrots and mushroom and cook for 1-2 minutes on high flame.
• Further add the red and yellow zucchini and cook them for 1-2 minutes on high flame.
• Now add the red, yellow and green bell peppers, broccoli and corn kernels and cook them too for 1-2 minutes on high flame.
• Add salt & black pepper powder to taste, oregano, chilli flakes and soy sauce, toss and cook for 1-2 minutes.
• Now add the cooked/boiled pasta, spring onion greens, lemon juice and coriander leaves, toss well and you can also add 50 ml of reserved pasta water, toss and cook for 1-2 minutes, healthy stir fried pasta is ready, serve hot and garnish with fried garlic and some spring onions greens, serve with some garlic bread slices.

Easy Italian Pasta with Broccoli Recipe (WITH A TWIST) | Orecchiette con Broccoli
You need to try this! There's nothing boring about broccoli, you just need to help it a bit along to get on the right track. In this recipe, I use some Sicilian flavor influences to do just that. The single ingredients might sound a bit odd at first, but once combined they create quite a harmony. I hope you enjoy this video & let's get to the cooking!
Traditional recipes are (almost) always the best, but that doesn't mean that variations of those recipes can't be (almost) equally delicious.
Hopefully, no one's Italian granny gets all broccoli with me now :)

Pasta con Broccoli
Serves 2
2 TBS pine nuts
extra virgin olive oil
4 TBS bread crumbs
2 cloves of garlic
4 anchovy fillets
2 TBS Italian parsley
zest of 1/2 lemon
sea salt & pepper
150-200 ml chicken or vegetable stock
100 g broccoli
2 TBS golden raisins
sea salt
160 g orecchiette
