Casseroles have been a staple in struggling homes for centuries. They got us by when we were kids and they will get us through now. They are easy fast simple comfort food that satisfies empty bellies and picky pallets. It’s time to revisit Granny’s kitchen for some of her super cheap meals.

6 to 8 ounces Diced Ham or Other Meat (Hot Dogs will Work)
2 cups Cooked Pasta, Potatoes or ….
2+ cups Veggies – Peas, Corn, Carrots, Broccoli, Cauliflower …

Salt & Pepper to Taste

Easy Ham and Broccoli Cheesy Casserole Recipe
This is such a simple casserole to throw together and you can change it up so many ways. It's moms Easy Ham and Broccoli Cheesy Casserole Recipe. Let me know what you think about this version and y'all enjoy.
Ingredients:
Bread Crumbs
1 head of fresh or frozen broccoli
1 small jar cheese whiz
2 thick slices of ham cut in chunks
1/4 cup milk
Cook broccoli 5 minutes in unsalted water.
In a small pan melt cheese and milk together.
Put broccoli in a baking dish.
Put chunks of ham on top of broccoli
Pour cheese sauce on top of broccoli and ham
Sprinkle the bread crumbs over mixture
Bake at 350°F until bread crumbs are browned.

Best Broccoli Rice Casserole

Ingredients
4 tablespoons (1/2 stick) salted butter
1 medium yellow onion, finely diced
1 clove garlic, grated
4 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1/4 teaspoon cayenne
3 cups whole milk
4 ounces cream cheese, at room temperature
1/2 cup grated Parmesan
1 teaspoon freshly ground black pepper
1/2 teaspoon kosher salt
1/2 teaspoon paprika
8 ounces processed cheese, cubed
3 cups grated sharp Cheddar
8 cups small broccoli florets
6 ounces diced pimentos, drained
2 1/2 cups cooked long-grain rice
Directions
Preheat the oven to 350 F degrees.
In a large skillet, melt the butter. Add the onion and garlic and cook, stirring with a wooden spoon, until softened, 3 to 4 minutes.
Sprinkle over the flour, dry mustard and cayenne and stir to mix it in well. Continue to cook for 1 minute.
Next, add the milk, stirring constantly; cook until thickened, about 2 minutes. Add the cream cheese and Parmesan, stirring until totally combined. Stir in the pepper, salt and paprika. Add the processed cheese, stirring until completely melted. Next, add 1 1/2 cups of the Cheddar and stir until melted. Then, fold in the broccoli and pimentos.
In a large baking dish, create a base with half of the rice. Top with half of the broccoli cheese sauce. Repeat with the remaining rice, then the remaining sauce. Sprinkle the rest of the Cheddar evenly over the top of the casserole. Bake until bubbly, about 30 minutes.

1 Tbsp oil
1 small onion, chopped
2 chicken breasts, cut into 1 cubes
1/4 tsp salt or to taste
1/4 tsp black pepper or to taste
2 tsp garlic, minced
1 cup cooked rice
1 can cream of chicken soup
2 cups chicken broth
2 cups broccoli florets
1 cup cheddar cheese, grated, mild or sharp
1-2 Tbsp sour cream, optional
1/2 cup Panko breadcrumbs
1/2 stick butter, melted
2 Tbsp grated parmesan cheese
Preheat the oven to 350 degrees. Add chicken and onions to a hot pan with 1 Tbsp oil. Season with salt and pepper, cook until chicken is browned. Add garlic and cook for 2 minutes. Add the rice, broth, soup, sour cream, and 1/2 cup cheese stirring to combine. Fold in the broccoli. Cook for 2 more minutes. Sprinkle remaining 1/2 cup cheese on top. Combine breadcrumbs with melted butter and parmesan cheese. Spread over top of chicken mixture. Bake for 30-35 minutes until golden brown and bubbly.

BROCCOLI BREAKFAST CASSEROLE
5 cups fresh broccoli florets
1 tsp garlic powder
1 tbsp curry powder
12 eggs
12 egg whites or 1 1/2 cups
1/4 cup 2% milk
Salt and pepper to taste
3/4 cup grated part-skim mozzarella
3/4 cup grated sharp cheddar
Instructions
Preheat oven to 375ºF. Spray a glass 9.5x12-inch casserole dish with cooking spray. Cut broccoli into small florets and steam for two minutes or until just tender. Toss broccoli with garlic powder, salt, and curry powder. Set aside.
Combine eggs, egg whites, milk, salt and black pepper in a large bowl and beat with a fork or a whisk until all of the ingredients are well combined.
Layer seasoned broccoli on the bottom of the casserole dish and evenly sprinkle the cheese over the broccoli. Pour the eggs over the broccoli and cheese and use a fork to make sure that the broccoli is evenly distributed throughout the eggs.
Bake for about 30 minutes or until the top is slightly browned and the eggs are cooked through. Enjoy!
NOTES
Storing leftovers. Place any leftover breakfast casserole in an airtight storage container in the refrigerator for up to about 5 days.
To reheat. Pop individual servings in the microwave and cook for 30-second intervals until warm. You can also place the casserole dish in the oven at 350ºF. If using the oven, loosely cover with foil and place the dish on the center rack for 15 to 25 minutes, until warmed through (the larger the serving, the longer the cooking time).
Freezing. Place leftovers in an airtight freezer-safe storage container or a freezer-safe baggie in the freezer for up to 3 months. Let thaw overnight in the refrigerator before reheating.
