Directions:
Beat egg yolks, 1/4 cup sugar, nutmeg, salt and vanilla together with rotary beater or electric mixer until very thick and light yellow. Slowly beat in brandy and milk. Cover and chill overnight. Shortly before serving, beat egg whites to soft peaks. Gradually beat in remaining 1/4 cup sugar with same beater, beat cream to soft peaks. Fold meringue into beaten cream. Then slowly pour on chilled brandy mixture folding in gently.

EASY Homemade Eggnog Recipe | Refined Sugar Free Option
How to make homemade eggnog with a refined sugar free option. This is a true classic holiday recipe, and if you don’t enjoy store bough eggnog I’d encourage you to try this homemade eggnog recipe. It just might change your mind!
Homemade Eggnog Recipe:
6 egg yolks
1/2 cup cane sugar or pure maple syrup
1 cup heavy cream
3 cups whole milk
1/2 tsp grated nutmeg
Pinch salt
1/4 tsp vanilla bean powder or 1 tbsp vanilla extract or 1 whole vanilla bean
Whisk together egg yolks and sugar until the mixture has lightened to a pale yellow and thickened. To a sauce pan, add heavy cream and whole milk. Add salt, nutmeg, and vanilla. Heat over medium until mixture is hot but do not allow it to simmer or boil. One ladle full at a time, add milk mixture to egg yolk mixture whisking constantly to temper egg yolks. Once most of the milk mixture has been added, add back to the sauce pan and heat over medium. Allow eggnog to thicken slightly, do not allow to simmer or boil. Eggnog will thicken more as it cools. Remove from heat and pour through a fine mesh strainer. Add alcohol if you wish. Allow eggnog to cool before serving. To speed up the cooling time, fill a bowl with ice and place the bowl or jar of strained eggnog over top. Will last a week in the fridge.

22.5 ml Overproof Jamaican Rum (Smith & Cross)
22.5 ml 100 proof Bourbon Whiskey (Old Grand-Dad Bonded)
30 ml Heavy Cream
15 ml Simple Syrup
1 Whole Egg
Grated Cinnamon
Grated Nutmeg
METHOD
1. Combine all the ingredients to your cocktail shaker
2. Dry shake vigorously
3. Wet shaker (preferably with a large cube)
4. Strain into a chilled stemmed cocktail glass
5. Garnish with freshly grated nutmeg and cinnamon
