Mincemeat Cookies
Ingredients:
1 Cup Crisco All-Vegetable Shortening
1 1/2 Cups Sugar
3 Eggs
3 Cups All-Purpose Flour
1 Teaspoon Baking Soda
1 9 Oz. Package of Condensed Mincemeat
1/2 Teaspoon Salt
Directions:
1. Preheat oven to 375 Degrees.
2. Beat 1 Cup Crisco and 1 1/2 Cups Sugar.
3. Blend in 3 Eggs.
4. Stir Together: 3 Cups Flour, 1 Teaspoon Baking Soda, 1/2 Teaspoon Salt.
5. Stir Flour mix into Shortening mix.
6. Crumble and mix in 1 (9 Oz) Package Condensed Mincemeat.
7. Drop By Rounded Tablespoon, 2 Inches Apart Onto Greased Cookie Sheets.
8. Bake at 375 For 8 To 10 Minutes.

Mince & Almond Slice how to Recipe - with Sweet short crust pastry
Makes 20 slices
Recipe Ingredients:
White Flour 451g
Water 57g
Castor sugar 112g
Cake margarine 112g
White shortening 112g
Homemade or shop Sweet Mincemeat 1126g

Macaroon Paste 859g
Method:
1. Please remember to Subscribe to my channel it’s free
2. Sieve flour into a bowl
3. Add the fat into the flour
4. Now work the fat into the flour, now making a nice fine crumb
5. Now make a well in the middle
6. Now with a 2nd bowl add in water & mix in the caster sugar
7. Now add in the mixed water & sugar into to flour
8. Now mix lightly into a pastry, not bread dough
9. Now finish on the table
10. Now shape into a ball
11. Now you need a baking tray 30 x 40cm with some baking paper
12. Now roll out the pastry with rolling pin to about 3 - 4 mm onto the paper
13. Now you are ready to dock the base
14. Now you can put your pastry onto the tray, just get a knife and cut off the edges of the pastry
15. Now pop the tray into the freezer for 10 min
16. Now fill up with homemade or bought sweet mincemeat 1126g spread out evenly
17. Now put into freezer until you have made the macaroon paste
Making the macaroon Paste Recipe Ingredients:
Granulated sugar 451g
Ground almonds 225g
Ground rice 28g
Egg whites 155g
18. Add the egg whites into a clean mixing bowl, then add in all the dry Ingredients mix round with beater, now you can mix on the mixer 1st speed for 5min, now scrape down, and now start mixing on 2nd speed for 3 mins, and it’s now ready to go onto the top of the mincemeat
19. Now take the tray out the freezer and add the macaroon paste to the top spread out evenly
20. Now spread evenly a light amount of caster sugar over the top, now add your faked almonds now you are ready for baking
19. Now bake at around 360 - 380 f for about 25 -35 min
20. The top of the slice wants to be golden
21. Well done bakers now you have baked the slice
22. You will have to wait a good hour to cool down to cut them up
23. Now you can mark and cut them up, you will get 20 nice size slices out of the tray

These mincemeat cookie bars, with a crumb crust inspired by The Minimalist Baker, are a simple, delicious treat made with vegan, shelf-stable ingredients. They have a base layer and crumb coat of vegan and gluten free cookie dough made simply with almonds, oats, maple sugar, maple syrup, coconut oil, and sea salt. Ingredients:
1 ½ c. whole raw almonds
1 ½ c. rolled oats (use gluten free if necessary)
4 Tb. maple sugar (or sub coconut sugar or brown sugar)
1 ½ tsp. cinnamon or Five Spice powder
½ tsp. sea salt
6 – 8 Tb. coconut oil, melted (depending on dryness of dough)
1 Tb. maple syrup
9 – 13 ounces (1 – 1 ½ c.) Farmer Street Pantry All-Fruit Mincemeat
Procedure:
1. Preheat oven to 350° F. To a high-speed blender or food processor, add first five ingredients. First pulse until mixed then grind until fine.
2. Transfer blended mixture to a bowl. In a separate small bowl, stir together maple syrup and oil. Drizzle this over almond mixture and stir with a spoon until it forms somewhat uniform crumbs that will hold together when compressed. Use extra oil if mixture is dry. Reserve 1 cup crumb mixture to use as topping.
3. Transfer larger amount of crumb mixture to a parchment-lined 8 x 8-inch baking pan. Other similar sizes will work as well. Form an even layer of crumb mixture on the bottom of the pan by first pressing down with the back of a spoon. If you want it smoother, place another piece of parchment or waxed paper on top of the base and press this with something that has a hard, flat surface, like a large drinking glass or glass butter dish. Remove top parchment.
4. Place in preheated oven and bake crust for 20 – 25 minutes until the edges have lightly browned and the middle shows some browning.
5. Remove from oven. Spoon onto crust the mincemeat, using the larger quantity if desired. Top with the reserved crumb mixture, spreading it as evenly as possible.
6. Bake in 350° F oven for 20 – 30 minutes or until the topping is lightly browned. Remove and cool at room temp for one hour. Chill for at least an additional hour before cutting.
Storage Notes:
These bars keep very well for several days at room temperature or for up to two weeks in the refrigerator or longer in the freezer.

Looking for something new to bake this weekend? These cookies, made with our vegan, all-fruit mincemeat, are deliciously sweet with sugar, savory from the raisins, apples, and spices in the all-fruit mincemeat, and golden-brown crisp with every bite.
These cookies are adapted from a recipe shared by Helene Corona Wallace, who received it from her mother, Minnie S. Corona of Canastota, NY. We'd love to see how you cook with mincemeat—tell us how you use it in the comments below!

Mincemeat Cookies
Ingredients:
½ c. shortening
½ c. sugar
2 eggs
1 tsp. vanilla
2 c. flour
1½ tsp. baking powder
12 oz. Farmer Street Pantry all-fruit mincemeat
Directions:
1. Cream together shortening and sugar. Add eggs, one at a time. Add vanilla.
2. Stir in the flour and baking powder until just combined. Cover dough in plastic wrap, press into a disc and chill at least one hour.
3. Dough will be delicate: flour it well and roll into a rectangle between two sheets of parchment or wax paper to 1/8 inch thickness.
4. Cut dough into 2 to 2½ inch squares. Place a rounded tsp. of mincemeat in the center. Bend two opposite corners over the filling until the tips are crossed; pinch together. Place cookies on two parchment-lined baking sheets.
5. Bake in a pre-heated 350° F oven for a total of 20 – 25 minutes until edges and bottom are golden brown, rotating sheets halfway. Do not over brown.
6. Cool on racks. Dust with a little confectioner’s sugar.
