Ingredients:
3 cups self raising flour
300ml cream (35% fat)
300ml soda water/plain sparkling water
Cook in a hot oven at 220oC/430oF until they’re golden brown and sound hollow when you knock on them. This might take around 15-20mins, sometimes a little longer, depending on how big you make your scones.
Optional extras for Blueberry and White Chocolate scones:
1.5 cups frozen blueberries
1 cup white chocolate chips

Full disclosure: these Linzer cookies may just be my all-time favorite cookie. My Homemade Linzer Cookies are a holiday tradition for a reason! They're perfectly nutty and rich, super tender, and not-too-sweet. The sweet and tangy raspberry jam perfectly balances out the delicious almond flavor.
I wish I were eating one right now. Actually, any time these cookies pop into my mind, which is often, I wish I were eating one!
Linzer cookies are incredibly simple to make but look so beautiful with their little hole or heart-shaped cut in the middle, showing off that sweet jam, and topped with powder sugar. I love them with raspberry jam, but you can use any of your favorite preserves!

Brownie Cookies
RECIPE COURTESY OF REE DRUMMOND

Yield: 36 cookies
Ingredients
4 ounces baking chocolate (unsweetened or bittersweet)
2 cups granulated sugar
2 sticks salted butter, softened
3 large eggs
1 tablespoon vanilla extract
2 1/4 cups all-purpose flour
1/4 cup plus 1 tablespoon cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt
Powdered sugar, for dusting
Directions
Preheat the oven to 350 degrees F. Line a baking sheet with a silicone baking mat or parchment paper.
Put the chocolate in a microwave-safe bowl and melt it in the microwave. Stir and let cool.
Using an electric mixer, mix together the sugar and butter in a large bowl until totally combined. With the mixer on low, slowly drizzle in the cooled chocolate. Scrape the bowl and mix again. Mix in the eggs one at a time, then the vanilla. Scrape the bowl once more and mix.
Combine the flour, cocoa powder, baking powder and salt in a bowl and stir it together. Add it in scoops to the mixing bowl with the mixer on low. Scrape the bowl once and mix one final time until all combined.
Scoop generous tablespoons of the dough onto the prepared baking sheet, then bake until the cookies are poufy and set, 11 to 12 minutes. Let them sit on the baking sheet for 1 to 2 minutes, then remove them to a wire rack to cool completely. Repeat with the remaining dough.
Once cool, sprinkle generously with powdered sugar.

Quick & Easy Mincemeat Cookie Recipe
These mincemeat cookies are quick and easy to make. You only need very basic ingredients that are found in most kitchens.
I hope you enjoy them! :)
Ingredients and instructions:
1/2 cup butter
1 Cup sugar
1 egg
2 Cups flour
1 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 cup mincemeat
Mix all ingredients together.
If you find it is not quite thick enough, slowly add more flour.
Drop by teaspoons on greased cookie sheet.
Bake 350 for 10-12 min.
Cool on a baking rack.
Enjoy!
