2 c Sugar 1/2 c Cocoa 1/2 c Milk 1 Margarine 3 c Quick quaker oatmeal 1 ts Vanilla Nuts; opt. Place the sugar, cocoa and milk into a saucepan and bring to a boil. Boil 2 minutes. Remove from stove and add the 1 stick oleo, the vanilla and then the 3 cups oatmeal. Add nuts if you wish. Wait a minute or so and drop by teaspoonsful on WAXED PAPER and let set until cool. Makes about 50 cookies. These are almost like a "candy" as well as a wheat-free cookie. -----

I'm obsessed with these cakes!!! I played around with this fantastic HEB option and voila! You can swop the milk, flavouring and add whatever you fancy. Today I added some grated carrot for a carrot cake, if you add fruit remember to syn it, cooked fruit has syns. Add choc shot for 1/2 syn per tsp or any low syn syrups. Ginger is nice and so is cinnamon. I haven't made one that I don't like!

Ok I know these are a little on the indulgent side! But once in a while :)
Full Recipe - Makes 12 Giant Cookies: - 125 grams dark chocolate for melting (I used 85% dark) - 150 grams whole grain spelt flour - 30 grams cocoa powder - 1 tsp bicarbonate of soda - 1/2 tsp salt (optional) - 1/3 cup large rolled oats - 125 grams of soft smooth peanut butter - 125 grams of coconut sugar (could also use xylitol) - 1 tsp vanilla extract - 1 flax egg - 1 Tablespoon coconut butter - 2-3 Tablespoons of PB powder - 3/4 cup of plant milk (if needed, see below) - 300 grams of large chocolate chunks (I used 70% dark)
Instructions: - Preheat the oven to 170 (gas mark 3-4) - Melt the 125 grams of 80% dark chocolate in a heatproof dish over boiling water (or use the microwave if that's how you role!) - Put the flour, cocoa, oats, PB flour, bicarbonate of soda & salt into a bowl - Cream the PB & coconut sugar in a another bowl - add the melted chocolate & mix together - Add in the flax egg & vanilla & mix again - Add in the dry ingredients (bit by bit) & mix gradually (this will seem very thick and that's ok - Add in 1/2-1 cup of plant milk to thin the mix slightly if needed - Throw in the big chocolate chunks & mix everything well - Scoop out 12 big blobs (spaced out well) onto a lined or greaseproof baking sheet.. - Bake for 18-20 minutes - they will seem soft at first but they will harden when cooled! - APPLY TO FACE!! - PS: These are amazing if you heat them up in the oven for a few mins to make them gooey & melting whenever you need one!! :)
