How To make Blueberry Risotto with Boletus (Cep)
250 g Fresh Boletus (Cep) 8.75 oz
cleaned, trimed and :
sliced 1 sm Onion, finely chopped
20 g Butter 0.75 oz
140 g Risotto rice, unpolished
-- 5 oz 150 g Blueberries 5.5 oz
1/2 dl White wine, dry 1/4 cup
4 dl Bouillon 1 3/4 cup
3/8 dl Olive oil 1/4 cup
1 Twig thyme
1 pn Garlic, mashed
60 g Butter 2 oz
In a saucepan heat the butter and saute the onion. Stir in the rice and the blueberries, saute briefly. Moisten with wine, cook until absorbed; moisten with bouillon and cook until tender. Stir continuously, if necessary add some bouillon. Season with salt and pepper. In a skillet heat the oil, saute mushrooms, garlic and thyme. Stir the butter into the risotto. Transfer to warm plates and decorates with mushrooms.

Black Trumpet Mushroom Risotto
Ingredients
2 cups Arborio Rice
1 tablespoon Olive oil
1/4 cup shallot, diced
1 cup Black Trumpet mushrooms, roughly chopped
1 clove garlic clove, minced
6 cups mushroom stock or vegetable stock
Preparation

Heat the stock in a large pot and keep at a simmer.

Heat the oil in a large non-stick pan over medium high heat. Add the shallots, garlic, and mushrooms. Remove the sauteed vegetables and keep warm.

Add the Arborio Rice to the pan and toast the rice over medium high heat. This should take about 2 - 3 minutes.

Add the vegetables back into the pan and stir to combine.

Add 1/2 cup of the stock into the pan and stir until it's absorbed. Repeat this process until the risotto has your desired consistency. Salt and pepper to taste and sprinkle with fresh chopped parsley.

Be very careful, do not eat mushrooms you are not 100% certain that they are edible. Use many resources, and be skeptical of your own conclusions. Rockland Public Library: Foraging for Edible Mushrooms Talk with Greg Marley
Rockland Public Library is pleased to welcome back Greg Marley for a virtual talk on mushrooms, this time with a focus on foraging. The talk will take place via the Zoom platform on Thursday, July 30th, at 6:30pm.
Collecting and eating wild mushrooms is an intimidating prospect for the beginner. There are so many different mushrooms, and some of them are devilishly difficult to tell apart. Some are poisonous; a few, dangerously toxic. However, there are a number of mushrooms that are great edibles, easily identified and without toxic lookalikes, and these may provide you with all the mushrooms you'll ever want! Mushrooming author and teacher Greg Marley will focus on some common “foolproof” mushrooms found in the Northeastern United States. This virtual talk will be especially valuable for those who are just beginning to learn about mushrooms.
