How To make Blueberry Oatmeal Breakfast Cake
1 1/3 c All-purpose flour
3/4 c Quick-cooking oats
1/3 c Granulated sugar
2 ts Baking powder
1/4 ts Salt
3/4 c Milk
1/4 c Vegetable oil
1 Egg
1 c Frozen blueberries*
Recipe by: St. Louis Post-Dispatch 3/24/97 * (do not remove from freezer until ready to add to batter). Preheat oven to 400 degrees. Grease an 8-inch round baking pan; set aside. In medium mixing bowl, combine flour, oats, sugar, baking powder and salt. Stir together milk, oil and egg. Pour at once into flour mixture. Stir just until moistened (batter will be lumpy). Fold in firmly frozen blueberries; spoon batter into prepared pan. Bake until cake is golden and pulls away from sides of pan, 20 to 25 minutes. Let cool on a rack for 5 to 10 minutes.
Serve warm. The recipe is from the North American Blueberry Council. -----

Healthy diet cake with oats and apples in 5 minutes! No flour, no butter, no sugar!
The sweetness comes from the natural sugars in the raisins and apple. So, it's just a little sweet. However, if you prefer a sweeter taste, you can always add a sweetener of your choice,
Ingredients:
230 g rolled oats(2 1/2 cups)
7 g baking powder(1/2 tablespoon)
1/2 teaspoon cinnamon
2 medium apples
3 eggs
1 teaspoon vanilla extract
40 g dried cranberries (optional) 1/4 cup
a pinch of salt
26 x 10 cm/ 10 x 4 inches baking form
bake 35-40 minutes at 180°C/360°F

Just when I thought overnight oats or the classic stovetop oatmeal were my favorites, this baked oatmeal proves its worth for breakfast. It's easily sliceable into 6 portions and can be jazzed up with a quick dollop of creamy yogurt. I'd say this healthy baked oatmeal recipe is another perennial winner for breakfast meal prep.

One Pan Blueberry Pie Baked Oats | Healthy Breakfast Meal Prep Recipe (gluten free & dairy free)
Let’s make One Pan Blueberry Pie Baked Oats???? This Healthy Breakfast Meal Prep Recipe saves so much time!???? Make this on Sunday, for example, and then you’ll have a ready breakfast waiting in the fridge for the week! You can heat it up in the microwave before serving or you can also enjoy it cold! The recipe is gluten-free & dairy-free! Such an easy and delicious breakfast idea!???? The pan I used was 30 cm x 20 cm (12 inch x 8 inch)
Ingredients:
2 mashed bananas
3 eggs
3 tablespoons maple syrup or your favourite sweetener (or more if you want to make it sweeter)
2 cups almond milk (480 ml)
2 cups gluten-free oats or buckwheat flakes (480 ml)
1 tablespoon baking powder
1 tablespoon cinnamon
1 cup frozen or fresh blueberries (240 ml)
1. Mix the bananas, eggs and maple syrup together
2. Add the dry ingredients and almond milk and stir until combined
3. Fold in the blueberries (save some for topping if you like)
4. Pour into a baking dish
5. Bake at 180 Celsius degrees / 350 in Fahrenheit for about 40 minutes
6. Cut into pieces. Serve with some vegan yogurt and maple syrup, for example!
7. Store in the fridge!
