3 lb Boiling chieken
1 Onion, skinned
1 Bouquet garni
Seasoning 8 oz Short grain rice
2 oz Butter
2 oz Castor sugar
2 oz Ground almonds
2 oz Blanched whole almonds
Lard or oil for frying Salt Fresh Parsley The Almond Milk 2 pt Water
8 oz Ground powded Almonds
1 ts Caster Sugar
Year 1066 Make the almond milk by simmering the almonds gently in the water and sugar until all the flavour is extracted (about 12 hours). Strain. Place the chicken in a large saucepan, cover with boiling water, add the onion, bouquet garni and seasoning. Cover, bring to the boil and simmer until the bird is tender.'About 1 1/2 -2 hours, according to age and size.) When cooked, remove from the stock, discard the skin and bones, cut the flesh into bite-sized pieces and keep warm. Cook the rice in the almond milk, adding some of the chicken stock to make up the required amount of liquid. Drain the rice but do not dry it-it should be moist. Return the rice to the saucepan and add the diced chicken, butter, sugar and ground almonds. Season well. Fry the whole almonds lightly in the oil or fat until golden. Sprinkle with a little salt. Serve the rice on a heated dish, decorated with the fried almonds and parsley. -----

Ingredients:
Cooking Chicken
• 2 tsp Oil
• 3 finely chopped Onions
• 1 tbsp Ginger-Garlic paste
• 1/2 tsp Turmeric powder
• 2 kg Chicken
• Water
• Salt to taste
For Vatan / Masala
• 1 tsp Oil
• 250 gm sliced Onion
• Chopped Ginger
• Garlic cloves
• 1/2 cup grated dry Coconut
• 2 tsp roasted Chana dal
• Coriander leaves
• Water
Chicken Sukka
• 4 tsp Oil
• Finely chopped Onion
• Finely chopped Tomato
• 1 tsp Ginger-Garlic paste
• 3 tsp Sunday masala
• Red chili powder
• Salt to taste
• Finely chopped Coriander leaves
Rassa
• 4 tsp Oil
• 3 tbsp Kanda lasun masala
• Red chili powder
Method:
Cooking Chicken
• Heat up oil in a cooker and add onion.
• Fry until onion gets nice golden color.
• When onion gets light golden color add ginger-garlic paste, turmeric powder and fry for about
a minute.
• Wash chicken really good and add it.
• Mix well and add water, salt.
• Close the lid and steam on medium heat for 15 minutes.
• You also can cook on medium heat until 1 whistle.
• Take the chicken pieces out into a dish.
For Vatan / Masala
• Heat up oil in a pan and add onion.
• Add ginger, garlic and fry until onion gets golden color.
• When onion begins to turn light golden move it aside in the pan and add dry coconut in the
remaining space.
• Fry coconut until it gets golden color and mix it with the onion.
• Turn off the gas and add roasted chana dal.
• Mix well and let the mixture cools down.
• You can roast 1 tsp besan after roasting coconut and use it in place of roasted chana dal.
• Transfer the mixture into a blender jar and add coriander leaves, water.
• Blend it together into paste. Vatan or masala is ready.
Chicken Sukka
• Heat up oil in a pan and add onion.
• Fry until onion gets golden color.
• Add tomato and fry until tomato is cooked well.
• Add ginger-garlic paste, 2 tsp blended masala, Sunday masala, red chili powder and fry
together for about 2 minutes.
• Add 3-4 tbsp water in which we cooked chicken, salt and cook for about 2-3 minutes.
• Add coriander leaves and mix well.
• Add this masala into the cooked chicken and mix well.
• Fry the chicken well for about 7-8 minutes. Chicken sukka is all ready.
Rassa
• Heat up oil in a pan and add the blended masala.
• Fry it well for about 5-6 minutes
• When the masala begins to release oil add kanda lasun masala, red chili powder and fry
together for about a minute.
• Add the leftover water in which we cooked the chicken, salt and mix well.
• Simmer the rassa on medium heat for about 7-8 minutes.
• Turn off the gas and rassa is all ready.

Ing:
2 lbs chicken tenders
1st marination:
2 tbsp fresh ginger and garlic
1 tsp chili garlic sauce
1/2 tsp salt
1 tsp lemon pepper
Marinate the chicken for about 20 minutes
Peanut Dipping Sauce Ing:
2 tbsp panut butter
3 tsp coconut cream
1 tsp chili garlic sauce
1/4 tsp fresh ginger and garlic
1 tbsp concentrated temarind
1 tsp cajun seasoning
1 tsp apple cider vinegar
2nd marination:
6 oz thick coconut cream minus 3 tbsp that will be used in the peanut sauce
1 tbsp cumin powder
1 tbsp coriander powder
1 tsp black powder
1/2 tsp turmeric
1/2 tsp salt
bamboo skewers (soaked in water for 20 minutes)
Metod:
Mix all the sauce with the above ingredients and keep aside.
Once the twenty minutes are up, flatten the chicken, cut in long strips then follow the method shown in the video add the chicken marination in the chicken and mix really well, cut the long strips and then mix the coconut cream, cumin powder, coriander powder, black powder and turmeric, mix the really well then put the chicken in this sauce, let the chicken marinate for about 30 minutes before you skewer the chicken onto the bamboo sticks and grill or bake the chicken in the oven.
Can be baked in the oven at 400 degrees F or can be grilled indoors or outdoors
