How to Blacken Fish
You can use almost any fish for this recipe, just be mindful of the size of the filet and adjust the cooking time as needed. Fish is easy to cook, and even easier to overcook, which you’ll want to avoid.
If frozen, allow the fish to thaw completely, and pat it dry. Let the fish sit at room temperature at least 15-20 minutes before cooking, don’t take the fish right out of the fridge and throw it into the skillet.
Melt just enough butter to coat all the fish, then dredge the filets in the butter. Season both sides of the fish well. Many seasonings will work great, but some of my favorite spices for blackening fish are paprika, Italian seasoning, chili powder, garlic powder, black pepper, and salt. There is no wrong amount of spice; if it sticks to the fish, it’s enough.
Heat a lightly oiled skillet on medium heat and then when the skillet is hot, add in the fish. The filet should sizzle when it hits the pan. How long the fish cooks will depend on the size and thickness of the filet. Leave the fish alone and allow it to cook undisturbed for 3-5 minutes, depending on the size of the fillet. Adjust the stove temperature as needed.
You can make due with any skillet, but a cast iron skillet is ideal. I travel with a Lodge brand cast iron skillet which works well and is priced well, too.
Turn the fish once and continue to cook on the other side for 2-4 minutes as needed. If the fish filets are especially thick, sear the sides of the fish as well.
Serve this blackened fish recipe away. Fish is a quick entrée to prepare and makes a nice main course for yesterday's leftover side dishes. Whether you’re serving salmon, tuna, swordfish steaks, mahi mahi, etc., you can whip up a fancy feast in quick time with this quick blackening technique.
The Perfect Blackened Fish Recipe // Easy Way to Blacken Any Fish You Have!
What’s up, y’all! In today’s video, I’ll show you the easiest recipe and method for how to blacken fish. Now, this recipe can be used for all types of fish you have on hand, which makes it the perfect and easy weeknight meal or dinner for you and your family. You can use tilapia, snapper, whiting, catfish, monkfish, etc., or whatever you have on hand. This recipe also cooks pretty quickly in under 5 minutes depending on the type of fish you choose to use. All you will need is your fish of choice, butter, cajun (all purpose) seasoning, black pepper, salt (optional) and paprika. All you need to do is season the fish, then place in a skillet with some butter and cook it until it blackens to your liking and develops a nice crust. This should take no longer than 5-6 minutes depending on the fish you use and its thickness. I mention it in the video, but what I mean by “blackened” is simply developing a nice crust and color on the fish while still keeping the fish nice and juicy on the inside. You don’t need to cook the fish in the skillet for too much longer than 5-6 minutes or you run the risk of overcooking it. Hope you enjoy the recipe!

Blackened Redfish Recipe on the Half Shell

Blackened Redfish Recipe
Ingredients
-2 or 4 redfish fillets or a fish of choice
-Blacken seasoning (see below)
-1/4 to ½ cup of butter
-2 to 4 cloves of garlic (you be the judge, if you like garlic add more!)
-Lemon
Recipe
Heat butter in microwave with garlic in measuring cup, set aside and let come to room temperature. Put fish fillets out on a pan and dry with paper towels, once butter is to room temp pour over fish, now sprinkle the fish with the blacken seasoning.
If you are going to grill it you need a flat cast iron skillet in order to cook it on the grill, if you are cooking inside just use a pan big enough to fit the fish in. I know in the video I cooked it first skin side down, you don’t have to really do this it’s just my preference.
Turn grill on high or mid/high to high for stove top, once pan is super-hot, add just a little butter to the pan and throw the fish meat side down, cook for 4 to 5 min and do not touch, depending on the size of the fish you may need to take it off around the 3 min mark. Also this is for fish that still have the skin and scales on, but if you have fillets that don’t have the skin you can flip and cook the other side the same way.
Now take that bad boy off and throw a little lemon on it and enjoy!
Blacken seasoning rub recipe
-3 tbsp smoked paprika
-2 tsp onion powder
-1 ½ tsp sea salt
-1 tsp garlic powder
-1 tsp ground black pepper
-1 tsp dried thyme
-1 tsp dried oregano
-1/2-1 tsp cayenne pepper (optional, you be the judge)
Mix everything together and store in air tight container.
