Light and Creamy Cheesecake Recipe
My creamy, fluffy, easy cheesecake recipe is perfectly sweet with a light and delicate texture, all wrapped in a crunchy Graham cracker and toasted pecan crust. Getting the perfect no crack bake is easier than you think and the end result is so beautiful it almost doesn’t need any topping!

Forest Fruit Cheesecake | NO Bake

Recipe:
Forest fruit jam: 125 g black forest fruits (frozen)
45 g sugar
3 g lemon juice
Bottom: 100 g crushed biscuits
50 g melted butter
Cream: 200 g cream cheese
40 g sugar
35 g plain yogurt
2 g vanilla extract
5 g lemon juice
7 g gelatine + 20 g water
120 g whipped cream
Method:
1. Forest fruit jam:
In a pot cook together the fruits with sugar and lemon juice,leave to cool completely,then blend until smooth.
2.Cake bottom:
Mix the crushed biscuits with melted butter and put into a 15 cm cake pan.
Press down evenly everywhere on the bottom of the pan.Place in the fridge for 20 minutes.
3.Cream:
Mix well the cream cheese with sugar,yogurt,vanilla extract and lemon juice.

Put the gelatine in cold water into a small bowl.Place this on the top of another bowl with hot water and mix until it dissolve completely.
Add this to the cream (3.) and mix.

Beat up the whipping cream until 50% then add to the cream and mix.

Take out 85 g from the total quantity of the cream and pour into your cake pan.Place in the fridge for 20 minutes.
Add 50 g of forest fruit jam to the rest of the cream,mix well then pour half of it into the cake pan.Place in the fridge for another 20 minutes.
Add the rest of the jam to the rest of the cream,mix it and pour on the top of your cake.
Refrigerate for 4-5 hour before serving!
Decoration to taste! Enjoy!

Ingredients:
Prepare Brownie layer:
-Boiling water
-Compound chocolate 180g
-Makhan (Butter) 180g
-Maida (All-purpose flour) 1 & ½ Cup
-Cocoa powder ¼ Cup
-Namak (Salt) ¼ tsp
-Baking powder 1 & ½ tsp
-Instant coffee 1 tsp
-Bareek cheeni (Caster sugar) ½ Cup
-Vanilla essence 1 tsp
-Olper’s milk ¾ Cup
Prepare Whipped Cream Layer:
-Ice cubes
-Olper’s Cream chilled 250ml
-Icing sugar ¼ Cup
-Vanilla essence ½ tsp
Prepare Chocolate Ganache:
-Compound chocolate 100g
-Olper’s Cream 100ml
-Compound chocolate
Directions:
Prepare Brownie Layer:
-On a double boiler,place a bowl,add compound chocolate,butter and mix well until chocolate melts.
-Remove from double boiler,place a sifter,add all-purpose flour,cocoa powder,salt,baking powder, instant coffee & sift all dry ingredients together.
-Add caster sugar,vanilla essence & whisk well.
-Add milk & whisk well.
-On greased baking dish (7 x 10 inch) lined with butter paper,pour prepared batter and spread evenly.
-Bake in preheated oven at 180C for 20-22 minutes or until skewer comes out clean.
-Take out from oven & baking dish,place on a wire rack & let it cool.
Prepare Whipped Cream Layer:
-In a large bowl,add ice cubes & place another bowl over it,add cream & beat well.
-Add icing sugar,vanilla essence & beat until stiff peaks form & transfer to a piping bag.
Prepare Chocolate Ganache:
-In a jug,add compound chocolate,cream & microwave for 40-60 seconds then mix well & set aside.
-On a serving dish,place chocolate brownie,add prepared olper’s whipped cream & spread evenly.
-Add chocolate ganache & spread evenly.
-Garnish with grated compound chocolate & refrigerate until chilled.

-Chocolate ganache dal ker evenly pheela lein.
-Grated compound chocolate sa garnish karein aur & thanda ho janay tak refrigerate ker lein.
