How To make Black Bean Chili Over Sweet Potatoes
4 lg Sweet Potatoes
1 tablespoon Olive oil
2 cup Diced Red Bell Pepper
1 1/2 cup Chopped onions
1 tablespoon Minced garlic
1 tablespoon Chili powder
2 teaspoon Ground cumin
1 can (14 1/2 to 16-oz) Ready cut
Toamtoes with juices 1 can (15 to 16-oz) Black beans
Rinsed thoroughly -- drained 2 cup Diced yellow crookneckSquash
1 tablespoon Minced seeded jalapeno chili
4 Lime wedges
Plain non-fat yogurt (option Chopped fresh parsley(option
Preheat oven to 400. Place sweet potatoes in baking dish. Pierce potatoes with fork and bake until tender, about 1 hour 15 minutes. Meanwhile, heat olive oil in large non-stick skillet over medium-high heat. Add diced bell pepper and cho pped onions and saute until golden, about 10 minutes. Add minced garlic and sti r mixture 2 minutes. Stir in chili powder and ground cumin, then tomatoes and b eans and bring mixture to simmer. Reduce heat to low, cover and cook 20 minutes . (Can be prepared one day ahead. Cover and refrigerate. Rewarm over low heat b efore continuing.) Add diced squash and minced jalapeno chili; cover chili and cook until squash is crisp-tender, about 6 minutes. Arrange 1 sweet potato on e ach plate. Split potatoes open and mash slightly. Spoon some chili over each. S queeze lime juice over and top with yogurt (* sour cream?) and chopped parsley if desired. Pass remaining chili separately.

Last week I made a vegetable dumpling soup, and it got a huge reaction from people. A lot more than I thought it would lol. I was asked if I had any more vegetarian comfort foods like stews. Well while this isn't a stew really I figured this Sweet Potato Black Bean Chili still fit the bill. With the the chilly weather on the way an awesome chili is perfect to warm everyone up. This is an easy one for dinner to through together and also (something I don't say often lol) healthy. So this is the perfect dinner to through together for the family that they will totally love! Makes: 6 Servings
1 Red Onion, Chopped
4 Garlic Cloves, Minced
3 Sweet Potatoes, Peeled and Chopped into 1/4 inch cubes
2 Tbsp. Chili Powder
1 Tbsp. Cumin
1 tsp. Oregano
1/2 tsp. Paprika
20 oz. Diced Tomatoes
6 oz. Tomato Paste
2 Cups Vegetable Broth
3/4 Quinoa
30 oz. Black Beas, Rinsed and Drained

1½ pound (680 grams) sweet potatoes peeled and chopped into 1-Inch cubes
1 cup (120 grams) green bell pepper diced
1 medium avocado diced
½ cup (100 grams) corn
½ red onion chopped
¼ cup pickled jalapeños chopped
FOR THE CILANTRO LIME DRESSING
1 cup packed (25 grams) cilantro
⅓ cup (72 grams) extra virgin olive oil
¼ cup (60 grams) lime juice
2 tablespoons (30 grams) maple syrup
½ clove garlic
½ teaspoon grated ginger
