Vegan Sweet Potato Chili with beans and quinoa (Gluten-free)
Quinoa Sweet Potato Chili is one of the many ways to enjoy a hearty, meatless chili that is ready under 30 minutes. This is a quick and easy combination that you can even make for lunch or dinner on busy weekdays. It is flavorful, filling and so delicious.
Ingredients
* 1 Onion
* 3-4 cloves Garlic
* 2 Tomato (medium)
* 1 Sweet potato (large)
* 2 cup Tomato sauce
* 2 cup Red kidney beans or black or pinto or cannellini or mixed whichever you prefer
* 1/2 cup Quinoa
Spices
* 1/2 tsp Sweet smoked paprika powder
* 1/2 tsp Basil
* 1/2 tsp Oregano
* 1/2 tsp Parsley
* Salt and Pepper to taste
* 1/4 tsp Hot chili powder or flakes optional
Instructions
Prepare the ingredients
* Peel and chop onion and garlic. Wash and chop tomatoes. Wash, peel and dice sweet potato. We used canned beans so nothing to do there.
Cook quinoa
* Rinse and drain quinoa well to remove bitterness.
* Add it into a stockpot or pan with double amount of cold water and salt. Bring it to boil.
* Once boiling, turn the heat low. Simmer until the water disappears. Remove from heat and cover with a lid. It should stay covered for 5 minutes. Now, you have fluffy, cooked quinoa.
Make chili
* Take a large pan and cook the chopped onion and garlic in a bit of olive oil. Cook them for 2-3 minutes.
* Next up are the chopped sweet potato. Stir and cook for 3-4 minutes to caramelize them a bit.
* Season it with ground basil, oregano, parsley, sweet paprika, salt and pepper. Stir until combined.
* Add chopped tomatoes, stir well and cook for 2-3 minutes
* Add the tomato sauce now and bring to boil. Cover it with a lid and cook it for 15 minutes or until the diced sweet potato is soft.
* Add canned beans and the cooked quinoa at the very end as they don't need to be cooked, just re-heated.
* You're almost ready! Add the sriracha or any other chili paste (if any) to your taste. Check the seasoning again. Add more salt and pepper to your taste. Now, you're done!

Recipe:
Black Bean, Sweet Potato and Quinoa Chilli
Serves 4-6
1 tbsp olive oil
1 onion, chopped
5 garlic cloves, chopped
1 1/2 tablespoon chilli powder
1 tablespoon ground coriander
1 can chopped tomatoes
250g dried black beans
3 teaspoons chipotle paste
1 teaspoon dried oregano
2 teaspoons salt + more to taste
2-3 medium sweet potatoes cut into cubes
1/4 cup quinoa
sour cream, to top(optional)
spring onions, to top(optional)
Heat the oil in a heavy large pot over medium heat.s Add the onion and cook until soft and beginning to brown, 6-7 minutes. Add garlic, chilli powder, coriander and stir. Cook together for another minute.
Stir in the tomatoes with their juices, beans, chipotle paste and oregano. Add 5 tins of water and bring to a boil. Reduce heat to low, cover with lid and simmer until beans are flavourful, about 3hrs.
Half way through cooking, add the sweet potatoes, quinoa and salt. Place the lid back on and simmer for the remaining time, or until the beans are soft and tender. Add more water if the chilli becomes too thick. Season to taste with salt and pepper. Serve with sour cream and spring onion.

In this video I show you how to make Vegan Quinoa Chili. Years ago, as a meat eater I loved Chili. After going vegan in 2015 I thought that my days of eating warm filling chili was long gone but little did I know that was far from the truth. Vegan Quinoa Chili Recipe
2 tbsp coconut oil
1 medium sized onion chopped
6 garlic cloves + 1 3-inch piece ginger chopped
2 large sweet potatoes chopped
1 tsp garlic powder
1 tsp cracked black pepper
1 tsp onion powder
½ tsp chilli powder
3 tsp cumin
1 tsp fresh jalapeno pepper
5 cups water
1 tsp better than boullion vegetable base
1 cup rinsed quinoa
1 15oz can black beans, rinsed
1 15oz can red kidney beans, rinsed
1 + ½ cup frozen corn
2 cinnamon sticks
1 tbsp brown sugar
1 tsp cacao
Salt to taste
Top with your favorite Mexican sides!

This Texas Style Quinoa Bean Chili made with a delicious blend of warming spices, packed full of healthy vegetables and plenty of savory flavors.
Prep Time: 20 min | Cook Time: 40 min | Total Time: 1-hour | Servings: 6
INGREDIENTS:
• 3/4 cup organic black quinoa, rinsed (
• 1 cup organic small red chili beans, soaked (
• 2 tbsp high heat oil
• 1 red onion, finely chopped
• 2 jalapeños, cored and finely chopped
• 2 bell peppers, cored and finely chopped
• 3 garlic cloves, minced
• 1/2 tbsp chili powder
• 2 tsp cumin seeds (
• 1 tsp dried oregano
• 1 tsp smoked paprika
• 1 tsp coarse Mediterranean sea salt (
• 2 organic whole bay leaves (
• 12 ounces diced tomatoes
• 4 ounces tomato sauce
• 1 cup corn kernels, fresh or frozen
• 3 cups vegetable broth
• cilantro, lime juice, and sour cream for toppings
INSTRUCTIONS:
1. Place the dry beans in a big container and cover them with cold water. Let them soak overnight. Once they've soaked, drain and rinse them.
2. In a large pot, heat some oil over medium heat. Add the red onion and garlic and cook until they become soft, which should take about 2 min.
3. Now, toss in the bell pepper, jalapeño, the soaked beans, and vegetable broth. Bring everything to a boil, then lower the heat to a simmer and let it cook for about 20-25 min.
4. Add the rinsed quinoa, diced tomatoes, corn kernels, tomato sauce, all the spices, and salt. Keep it simmering for another 15 min.
5. Sprinkle some lime juice on top. If you like, you can garnish it with sour cream and cilantro. Enjoy your meal!
