ICING:
1/2 c Margarine 8 oz Cream cheese 2 c Powdered sugar Put eggs in a 1/2 cup measure and fill to 1/2 cup with water. Mix together flour, sugar, baking soda, crushed pineapple and vanilla. Bake in round or oblong pan at 350~ for about 35 minutes. Icing. Beat ingredients well and pour over warm cake. -----

CARROT CAKE: Dry ingredients: 2 Cups cake flour 1/4 Tsp salt 2 Tsp baking powder 1 Tsp baking soda 1 Tsp ground cinnamon 1/2 Tsp ground nutmeg 1/2 Tsp ground cardamom 1 tin of crushed pineapple 2 cups grated carrots
Wet Ingredients: 4 Large eggs 1/2 cup brown sugar 1 cup white granulated sugar 1 Tsp vanilla 1 cup oil 1 cup buttermilk
Cream cheese: 1/4 cup Medium fat cream cheese 1 Cup heavy cream 1/3 cup (80ml) powder sugar (can be reduced to make it less sweeter) 1 Tsp lemon juice
Fresh cream: 1 Cup heavy cream 1/4 Cup powder sugar (icing sugar)
