How To make Bimini Bread
3/4 c Hot Water
1/2 c Oats
1 1/2 ts Molasses
1 T Butter or Vegetable Oil
1/2 ts Salt
1 1/2 c Bread Flour
1 ts Dry Yeast
Soak the oats, molasses and butter in the hot water for 2 minutes. Add to the bread machine along with the other ingredients. Follow manufacturer's directions for your machine, using the cycle you'd use for white , sweet bread, light-to-medium setting, and the equivalent of 2 cups of flour. I found in the Regal Bread Machine that I had to add 2 additional tablespoons of flour to get a good dough ball. Recipe From: The Miami Herald newspaper, October 24, 1996. Per Serving: 90 calories, 3 grams protein, 16 grams carbohydrate, 1 gram fat, 15 percent calories as fat, 0.7 grams fiber, 3 milligrams cholesterol, 70 milligrams sodium. Exchanges: 1.1 bread, 0.2 fat.

2/3 cups sugar
1 teaspoon salt
1 1/2 cup water
1/2 tin (1/2 cup) evaporated milk
2/3 cup vegetable oil
3 to 4 tablespoons butter (soft)
*allow to rise and bake at 350 degrees for 25 to 30 minutes or until golden.

1 tsp (3g) Yeast
0.6 cup (140ml) Milk
2 cups (300g) Bread flour/wheat flour
1/2 tsp (3g) Salt
2 tbsp (28g) Unsalted butter
Egg wash
Unsalted butter
Mold size 20x20cm/8‘’x8‘’
170°C (340°F) bake for 20 minutes

1. If you use unsweetened condensed milk, please add 25 grams of sugar.

How to make a soft and fluffy, warm and buttery Condensed Milk Bread.
Here's what you'll need:
1 cup milk (250ml) room temp (you can use fresh, UHT or evap milk)
¼ cup sweetened condensed milk (75g)
1 egg
2 tbsp sugar (30g)
2 and ¼ tsp instant yeast (7g) (TYPO ERROR IN THE VIDEO--its in TEASPOON not CUP)
3 and ¼ cups All purpose flour (400g) plus more for kneading
1 tsp salt (5g)
¼ cup softened butter (50g)
Glaze:
3 tbsp softened butter (45g)
3 tbsp sweetened condensed milk(45g)

Layer as ordered in a medium cooking dish
2 lbs. of grouper (cut into strips)
8 potatoes (peeled and sliced)
2 onions (sliced)
4 green peppers (sliced)
4 tomatoes (sliced)
Add melted butter and lemon pepper to taste, generally around ½ a cup.
Cook at 450 degrees for 45 minutes or until tender.

Ciabatta
Ciabatta is my way to share with you another pre-ferment method. In this recipe, we use Biga, which’s a quick fermented dough (compared to sourdough). By combining water, flour and a tiny bit of yeast the night before will result in a much more complex flavor and an extension of the shelf-life of the product. Super easy recipe, you can make it every week for sandwiches.
So what are you waiting for!?
Ingredients:
Biga-
230 gr flour
170 ml water
1 gr dry yeast
Ciabatta-
Biga (400 gr)
230 gr flour
180 ml water
10 gr salt
4 gr dry yeast
Preparation steps:
- The night before, mix in a bowl all the Biga ingredients. Cover and let it ferment for about 12 hours.
- The following day- in the same bowl of the Biga- add water and mix well.
- Add the flour, yeast, and salt. Knead in the bowl for about 5 min.
- Transfer the dough to a greased squared box. Cover and let it proof until doubled in size.
- Flour generously the dough and the working surface. Using a scraper detach the dough from the side of the box.
- Flip the dough on the working surface and flour the sticky side.
- Divide the dough to the desire ciabatta size (I divided it in two).
- Let it rest for an hour. Preheat the oven to 450F or 230C with a metal bowl full of water at the bottom of the oven).
- Gently!!!!! flip the pieces of ciabatta and place them on a baking tray. Bake for 25-30 min.
- Let it cool down for 10-15 minutes.
