How To make Big Soft Almond Cookies
1 c Butter, unsalted; room temp
1 c Sugar
2 lg Eggs
1 c Almond filling; canned
1/4 c Milk
3 c All-purpose flour
1/2 ts Baking soda
1/4 ts Salt
1/4 c Almonds; slice/blanch
Heat oven to 350 degrees. In a mixing bowl, cream together butter and sugar until smooth. Add eggs and blend. Add almond filling and milk and blend again. In a separate bowl, mix together flour, baking soda, adn salt and add to the creamed mixture. Scoop 2 rounded tablespoons of dough and roll toether to form each cookie. Drop dough onto lightly greased cookie sheets, spacing the cookies 2 inches apart. Press sliced almonds onto tops. Bake until cookies are lightly golden and firm to the touch, about 15 minutes. Using a spatula, transfer cookies to a rack and let cool. -----

How to make an easy chewy cookie using almond flour.
Ingredients:
1-1/4 cups Almond Flour (140g)
1/3 cup Brown Sugar (64g)
1/2 teaspoon Baking Powder (2.5g)
1/4 Teaspoon Salt (1.5g)
1/2 cup Dried Cranberries (60g)
1 Egg
1 teaspoon Vanilla (5ml)
3 tablespoons Coconut or Vegetable Oil (45ml)
Directions:
1. In a large mixing bowl, whisk together the almond flour, sugar, baking powder, salt, and cranberries until well combined. Set aside. In another bowl whisk the egg until lighter in color. Add the oil and vanilla, stir until well combined. Add the egg mixture to the flour mixture and mix until a dough forms. Chill the dough covered in the freezer for about 15 minutes. Scoop one teaspoon of dough and shape into a ball. Place on a parchment lined baking sheet. Gently press each dough ball down slightly. Bake in a preheated oven at 375F for 7-10 minutes or until golden brown.

This particular recipe is rich with history, dating back more than 80 years and was brought to Australia by Italian immigrant and renowned pastry-chef, Giorgio – now 94 years old. These almond biscuits are sold by Brunetti Classico in Melbourne and are one of their most popular delicacies.
Aside from their irresistible almond flavour, their unique quality is the delicate crunch on the outside and soft centre. Once you add a flaked almond or a small dollop of your favourite jam, you will find it hard to resist making these on repeat. Plus, they’re gluten free!

????Ingredients: (Soft Amaretti Lemon cookies - 30 cookies):
2 cups blanched almond flour sifted (200 g)
1 cup granulated sugar (200 g)
2 egg whites large
1/3 cup confectioners’ sugar (55 g)
1/2 tsp almond extract
Pinch of salt
????Directions:
Pre-heat Oven on 320°F (160°C)
Step#1- Using a handheld mixer whisk egg whites, salt and almond extract until frothy. Slowly add the sugar and continue beating. Zest the lemon peel right in.
Step#2- Sift almond flour and fold in gently using a spatula turning from bottom to top.
Step#3- Using a 1 tablespoon ice cream scooper form cookies. Roll between your palms and into confectioner’s sugar.
Step#4- Place on a parchment paper lined cookie sheet. Pinch cookie using thumb, index and middle finger creating a pyramid shape.
Step#5- Bake at 320°F (160°C)- for 20 minutes.
Cool and enjoy!
They store well in an airtight container up to a week.
