How To make Bettie's Fruitcake Cookies
1/4 c Butter; ( 1/2 stick)
1/2 c Honey
2 Eggs
1/4 c Dark rum or pineapple juice
1 1/2 ts Baking soda
2 tb Milk
1 1/2 c Sifted all-purpose flour
1/2 ts Ground cloves
1/2 ts Ground allspice
1/2 ts Ground nutmeg
3 c Chopped walnuts
1 c Chopped candied cherries
1 c Golden raisins
3/4 c Chopped candied orange peel
1/2 c Chopped candied pineapple
Recipe by: St. Louis Post-Dispatch 11/30/96 In a mixing bowl, beat butter until light; continue beating while adding honey in a fine stream. Beat in eggs and rum. Dissolve baking soda in milk; add to honey mixture. Sift together flour, cloves, allspice and nutmeg. Stir half of the flour mixture into honey mixture. Toss nuts, cherries, raisins, orange peel and pineapple with remaining flour; fold into dough. Refrigerate for 30 minutes. Preheat oven to 250 degrees. Drop dough by rounded teaspoons onto greased cookie sheets. Bake for 25 to 30 minutes or until lightly brown. -----

Fruitcake cookies have become one of my favorite holiday cookies. Even if you don't like traditional fruitcake these are worth making. Filled with lots Christmas color, flavor and chewy, yummy texture. A must make for the holidays.
Full Recipe:

Fruitcake Cookies/Christmas Rocks
Mix together:
¾ cup butter
1 ½ cup granulated sugar
3 cups self-rising flour
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon allspice
3 eggs beaten before adding
½ cup cooking sherry or grape juice
½ cup concentrated orange juice
1 lb combination of candied red cherries and green candied cherries diced
1 lb candied pineapple diced
2 ½ cups pecan pieces
Place on foil sheets to bake, dip out ¼ teaspoon bite size cookies
Bake 350 10-15 minutes
Makes @ 350 cookies
Dixie’s tip… She told me to mix the diced candied fruit with some of the flour before mixing together to keep the fruit from being so sticky.

1/2 cup butter crisco
3/4 cups sugar
1 egg
1/2 t. vanilla
1/2 t. almond extract
1 1/4 all purpose flour
1 /2 t. baking soda
1/2 t. Salt
350 10 to 12 minutes

Since most of my professional work tends to be on more serious subject matter, I decided a video on how to bake fruitcake cookies for the holiday season, narrated by a holiday gnome, would be quite opposite.
