Cowboy Pinto Beans Recipe
1 pound dried pinto beans
1 large yellow onion, sliced
1-2 jalapeños, diced
1 ham hock (8 to 10 ounces)
1 1⁄2 tablespoons dried cilantro
½ tablespoon Red River Ranch Original Seasoning
½ tablespoon Mesquite Seasoning
1. Pour the beans into a large soup pot. Pour enough water over the beans until they are covered by about 2 - 3 inches.
2. Add the onion, jalapeño, ham hock, and cilantro. Cook over high heat until the mixture reaches a rolling boil, stirring occasionally.
3. Cover and boil hard for 30 minutes, stirring occasionally. As soon as the beans are boiling, you may need to add more warm water to keep them slightly covered and throughout the cooking process.
4. Reduce the heat to medium. Stir in the spices. Cover and simmer for 11/2 to 2 hours, stirring occasionally, until the beans soften. Season again to taste, if necessary.

First thing that comes to mind when someone says beans is usually gas. Which is not necessarily a bad thing, it's a natural body process, you will have it with or without beans, just think of it as a massage for the digestive tract. Now lets make this soup...
INGREDIENTS:
6 cups Water
2 30oz Cans of Pinto Beans
3 Bay Leaves
2 Medium Size Onions Sliced
8oz Mushrooms Slices
1/2 Red Bell Pepper (any color is fine though)
1 tbsp Chopped Jalapeño Pepper
Salt
Pepper
Garlic Powder
1/2 tsp Cumin
Cayenne Pepper (optional)
Green Onion (garnish)
LET'S COOK
•Add 6 Cups of water in a pot set on a medium high heat.
•Rinse and add 2 30oz cans of Pinto Beans in the pot along with the 3 Bay Leaves
•Coat the bottom of a pan with oil, and caramelize the two onion, a dash of salt and really let them cook down.
•Once the onions are cooked down add the sliced mushroom and diced bell pepper. Add a little salt and pepper. Allow them to cook completely, when everything looks caramelized add to the pot of beans.
•Give it a stir. Season to taste with Salt, Pepper, and Garlic Powder.
•Add 1 tbsp of Chopped Jalapeño Pepper, 1/2 tsp Ground Cumin, Cayenne Pepper to taste (if you need more heat)
•Stir. Reduce heat to a slow simmer. Place lid on the pot and let simmer for 20 minutes.
•After 20 minutes remove the bay leaves and you are ready to serve.

I said the pinto beans were coming back in style, I may be forward thinking (maybe by 2030). However this soup is really good, in-fact to good for me not to share, especially for it being just vegetables. This is a great recipe to have on hand especially if you have a dinner guest that is trying to eat healthier, vegan, vegetarian, or gluten free. It has great flavor + no meat + no dairy + no gluten = they will be impressed.
