⏰it’s time to start fermenting at home - its fun, easy, affordable, and a great way to add gut healthy probiotics to your day. That’s why I am starting this fun Fermentation Friday series!!
????I love having fermented tonics in the fridge to make a refreshing beverage with amazing gut health benefits.
Beet kvass is a traditional fermented originating from Eastern Europe.
????this is a simple facto-fermentation version - just using beets, salt and water. If you or your family makes it a different way, let me know! i love to learn traditional recipes.
????????since it’s fermented it has those great, naturally occurring probiotics that feed our gut bugs. Beets are also known to support liver health and this kvass has some key nutrients like B vitamins, vitamin C, and minerals.
here’s how I made mine:
- 375g organic beets (about 3-4 medium beets)
- 1.5 tbsp sea salt
- 7 cups water
1️⃣Wash your beet root but leave the skin on. Roughly chop into small cubes.
2️⃣Add the beets to a half-gallon glass vessel. Add in the water and salt and stir well until it is dissolved. If any of your beets are floating, you can use a fermentation weight to keep them submerged in liquid and avoid mold.
3️⃣Let it sit on your counter or cupboard. I let mine go for about a week, but taste as you go to see how you like the flavor.
4️⃣Then transfer it to the fridge. My favorite way to use the liquid is to add a few ounces to some sparkling water with lemon or lime juice. Its savory and refreshing and great for the gut.

Easy and delicious fermented beet juice recipe ( kvass )
Easy step by step on how to make your own fermented beet juice, a super powerful probiotic for your well being ( pol. zakwas buraczany )
Ingredients:
about 1 kg of raw beets, preferably organic
1-2 heads of garlic + spices of your choice ( bayleaf, black pepper, cumin, allspice etc )
For the brine:
1 heaping Tbsp salt ( I use grey sea salt, Himalayan is good too ) per 1 L of cold water (spring or filtered to avoid the chlorine and other chemicals usually present in tap water ).
