5 cloves of Garlic- P3.00
1 tbsp of Paprika- P3.00
2 tbsp of Oyster Sauce- P2.00

1 tbsp of Taco Mix Seasoning- P3.00

Traditional Arayes - Ground Beef Pita Sandwiches
I’m sure you’ve seen the “kofta” version of Arayes which includes parsley and onion finely minced. While I’ve shared my version of this and it is still a fav, I wanted to show you the traditional version which is much more simpler and needs only 4 main ingredients - pita bread, good quality ground beef, tomato, and 7 spice. These are so good, crunchy, and juicy. Also it wouldn’t be wrong to add some cheese inside ???? They make for a quick lunch or dinner.
6 loaves pocket pita bread
1 lb extra lean ground beef
1 tbsp Arabic 7 spice (or ground allspice)
1 tomato, diced finely
Salt and pepper to taste
Oil for brushing
Preheat panini press or skillet on the stove on medium high heat.
In a mixing bowl knead ground beef with 7 spice, diced tomato, salt and pepper.
Stuff the pita bread with the ground beef mixture in an even layer, I usually go for a thin to medium thickness.
Lightly brush the outsides of the bread with oil and grill the pita for about 4 minutes in a panini press. On the stove top, cook on each side for about 2 minutes.
Serve with yogurt, fries, and salad for a full meal.

Lebanese Arayes are pita pockets that take 20 minutes to make and grill. They have a tender and delicious spiced meat filling that makes for a great treat. I'll show you how to make the filling and what kind of bread to use.

Ingredients:
5-6 Flat breads (pita or Lebanese bread
500g (1lb) Minced Beef (or you can use lamb)
30g (1oz)Parsley
1 Medium brown onions
1-2 Garlic Cloves
1 1/2 Tbsp Pomegranate Molasses
1-2 Tbsp oil + more
1 Tsp salt
1/2 Tsp Boharat
1/4 Tsp pepper
1/4 Tsp Cayenne
1/8 Tsp Cinnamon

Directions:
To make the meat filling:
1. Add your Onion and parsley to a food processor or blender, and process till very finely chopped
2. Combine meat and remaining ingredients (apart from the bread) in a mixing bowl and mix thoroughly until well combined
3. Cook a small piece of the meat in a pan and taste for seasoning. Adjust if necessary
To prepare the Arayes:
1. For the pita, microwave the bread for 30 seconds and then slice into pockets or quarters
a. If using Lebanese bread there is no need to microwave
2. Use a knife to pry both sides of the bread apart till a pocket has formed
3. Add a few tablespoons of the meat filling to each pocket and massage to the edges of the bread. Aim to have the Pita about 1cm (1/3in) thick, or 1/2cm (1/6in) thick for the Lebanese bread. Stuff the bread pieces till you have used up the meat mixture
4. Use a brush to oil both sides of the bread generously with olive oil
To cook the Arayes:
1. Preheat a grill pan on medium high heat and when ready add your Arayes to the pan
2. Grill for 4 minutes (3 for Lebanese bread) and then flip once they start to sizzle
3. Cook for a further 4 (or 3) minutes and then remove from the pan
Prepare a simple chopped parsley and onion salad and serve the Arayes.
Enjoy!

✨Ground Beef Pita Wrap✨
Ingredients:
• 2lbs lean ground beef
• Olive oil
• 1/2 onion
• 4 garlic cloves
• 2 tsp Lawry’s Seasoned salt
• 2 tbsp Cajun seasoning
• 2 tsp Worcestershire sauce
• 1/2 a can of Chipotle Sauce
• Salt to taste
• 2 Green onions ( the white part)
Pico de Gallo:
• 1 Jalapeño
• 1 tomato
• Cilantro
• Onion
• Cucumber
• 1/2 lime
• Salt to taste
Sour Cream Spread:
• sour cream
• Chipotle sauce
• Salt
• Black pepper
• Green onions( green part)
1. Add oil to a frying pan and let it heat it up a bit before adding the ground beef.
2. When the meat is halfway done add the garlic,onion and seasonings. Cook until meat is browned and cooked all the way through.
3. While the meat finishes cooking make the Pico de Gallo. And the sour cream spread.
4. Heat up the Comal ( Griddle) and warm up your pita, 30 seconds each side. And then add some garlic butter spread.
5. Assemble Pita Wrap and Enjoy ????

Arayes - Lebanese Meat Stuffed Pitas!
Meet my current obsession - Arayes! Pita pockets stuffed with seasoned meat kofta filling, then pan fried until crispy. Think - Lebanese quesadillas. Enjoy for dinner or pass them around as an appetiser. Easy and fun to make!
RECIPE ⬇️⬇️⬇️ or PRINT:

ARAYES - Lebanese meat stuffed crispy pita {Makes 10 halves}
5 pita bread, the thin pocket type, ~15cm/6 diameter (250g/8oz pack), cut in half*
Olive oil spray (or brush with olive oil)
SPICED MEAT FILLING:
1/2 onion, grated using box grater
500g/ 1 lb lamb or beef mince (ground meat)
2 garlic cloves, finely grated
1 tbsp finely chopped parsley, optional
3 tsp EACH coriander, cumin
1 1/2 tsp smoked paprika (sub plain paprika)
3/4 tsp ground allspice (sub mixed spice)
1/2 tsp cayenne pepper (reduce/omit for less spicy)
1 1/4 tsp cooking/kosher salt
WHIPPED TAHINI YOGURT SAUCE:
1 cup plain yogurt (250g), 2 tbsp tahini, 1 tbsp lemon juice, 1 garlic clove finely grated, 1/2 tsp cooking/kosher salt
1. Mix filling ingredients. Divide into 10 portions, flatten into thin semi-circle about the shape of a pita half. Stuff inside pita, enclose, press to spread to edges. (If pita is tearing, microwave 15 sec then use butter knife to split).
2. Spray with oil, pan fry on medium high 2 min each side until crispy and meat is cooked. Keep cooked ones warm in 50C/120F oven on rack. Serve with sauce!
3. Sauce: Whisk to mostly combine then microwave 20 sec on high. Whisk again – should be like soft whipped cream. Serve slightly warm or at room temp.
* Can use 2 to 3 x large Lebanese bread instead, then once cooked cut into large pieces. Flatbreads (like tortillas) – spread meat on half, fold over then cook like quesadillas!
