How To make Beef Lo Mein
4 tb peanut oil
1-1/2 lb Flank steak; or shrimp or chicken
2 Celery; shredded
2 Slices Ginger; minced
1 c Cabbage
1 Green onion; minced
2 tsp Cornstarch
1/2 lb Spaghetti; or Chinese/noodles
1/2 tsp Sugar
1 tb Soy sauce; light soy
1/2 tsp Salt; optional
Cook spaghetti as directed on package, AL DENTE, drain, rinse in cold water, add a few drops oil and mix to keep from sticking. Set aside. Slice steak VERY THIN, across the grain, 2" pieces. Mix together, steak, ginger, scallion, cornstarch, sugar, light soy, set aside to marinate. Heat wok to smoking, add 2 tbs oil. Stir fry meat mixture two minutes, do not overcook, Reserve. Add 2 tbs oil, heat, stir fry carrots and cabbage two minutes, add spaghetti, stir well and cook a few minutes, add meat mixture, 1 tbs soy and salt. Stir a minute to heat and serve. Nice thing about stir fry cooking, just about anything goes. So, substitute, add -----

Lo Mein noodles are yellow noodles that are about 3mm/ 1/8 wide and they are yellow because they are made with egg (as opposed to white noodles). Best if you can find fresh noodles in the fridge section of the grocery store (usually just soak in boiling water for a minute), but can be made with dried egg noodles, ramen OR even pasta (yep really, I've made Lo Mein plenty of times with SPAGHETTI, no one can tell the difference once it's cooked!)

INGREDIENTS:
1/2 to 3/4 pd thinly cut beef - I used London Broil
1 cup sliced onions
1 cup sliced/julienne bell peppers
1 cup sliced mushrooms
4-5 garden onions - julienne with whites/greens separated
2 tsp. minced garlic
1 tsp. minced ginger
lo mein noodles
Sauce:
2 tbsp. beef broth (or chicken/vegetable/water)
1 tbsp. mushroom soy sauce or low sodium soy sauce
2 tbsp. oyster sauce
1 tsp. sesame oil
sprinkle white pepper
Beef Marinade:
1 tbsp. low sodium soy sauce
1 tsp. Soun Xing Wine or rice wine
2 tsp. cornstarch
1/4 tsp. baking soda
