Slow Braised Beef Cheeks Recipe
This is my slow cooked beef cheek recipe, with an amazing red wine sauce and some mashed potatoes. A classic recipe but super delicious.
Ingredients for 6ppl:
6 Beef/Ox Cheeks
500ml Red wine (and a glass for yourself)
500ml Beef Stock
1 Large/Medium white onion
4-5 Carrots
3-4 Celery sticks
Olive oil, salt and pepper
3-4 Bay Leaf
20-30g Fresh thyme
4-5 Garlic Cloves
50ml Brandy to deglaze plan
(50g butter with 25g cornflour to thicken sauce)
Parsley to garnish

Italian Grandma's Giardiniera Recipe is our Nonna's version of the authentic Italian Salad Mix or anti-pasta salad and was made famous in as Chicago Style Giardiniera at hotdog and Italian beef stands in Chicago. This is our first time preserving our Italian Nonna's authentic giardiniera recipe by canning it.The French recipe for Jardiniere is similar to Italian Giardiniera. Pre-Soak Ingredients for 6 Quart Recipe:
Chopped Carrots - 5
Serrano Peppers - 5
Sliced Jalapenos - 17 (substitute Italian Frying Peppers for Mild)
Chopped Cauliflower - 1 Head
Sliced Chili Peppers 8 (Substitute 4 Bell Peppers for Mild)
Salt 2 Cups - Chill for 12-24 hours
Post- Soak Ingredients
Green Olives - 2 cups chopped or whole
Olive Oil - 4 cups (may use canola oil)
3 to 1 Vinegar/ Water Mix - 4 Cups
Red Pepper Flakes - 4 TBS
Black Pepper - 2 Tsp
Minced Garlic - 18 Cloves (Yes we are Italian..LOL)
Celery Seeds - 2 Tsp
Oregano - 8 tsp

Canning Giardiniera
This is a water bath canning recipe for homemade giardiniera! I water bathed these jars for 30 minutes. Try it..if you like it spicy!!
Recipe added on 5/7/23:
1 whole package of celery
2 bell peppers of color choice
1 whole small cauliflower or 1/2 if large
6 jalapeños or serrano peppers - seeds in if you want more heat otherwise remove
2 cups of chopped carrots
Prepare your canning jars. Chop all vegetables finely. Add to a bowl and sprinkle over all vegetables 1/4 cup of kosher salt. Cover vegetables with water. Cover and refrigerate for 6 hours or overnight.
Rinse and drain your vegetables and allow time to drain in colander with bowl under as seen. Start your brine.
2 cups of wine vinegar of choice red or white. 2 cups of water and bring to a boil. Start preparing your jars with spices.
1/2 tsp dried oregano
1/2 tsp coriander seeds
1/2 tsp fennel seeds
1/4 tsp mustard seeds
1/4 tsp whole peppercorns
1/8 tsp celery seed
1 bay leave to each jar (pints I used) you can always divide in half if leave is too big
1/4 tsp of red pepper flakes if you want more heat.
Pack your jars with vegetables to close to first rim on jar, leave head space. You may have to pack them down with canning spatula as seen in video to reduce space. Add brine to cover vegetables in jars. Again, use canning spatula to remove air bubbles. This is an acidic recipe and can be water bath canning method. Follow your water bath canning method of canning this recipe or refrigerate.

Chicago-Style Italian Beef Sandwich

Ingredients
Pot Roast:
1 boneless beef chuck eye roast (about 3 1/2 pounds), tied with butcher's twine
Kosher salt and freshly ground black pepper
2 tablespoons vegetable oil
1 medium onion, roughly chopped
1 tablespoon dried Italian seasoning
2 teaspoons crushed red pepper
6 cloves garlic, roughly chopped
1/2 cup dry red wine
5 cups beef stock (or enough to submerge the roast about three-quarters of the way)
2 sprigs fresh thyme
Sweet Peppers:
4 green bell peppers, cut into 1-inch-wide strips
1/4 cup olive oil
1 teaspoon granulated garlic
Kosher salt and freshly ground black pepper
Sandwich Build:
6 soft hinged French rolls (preferably from Turano or Gonnella bakeries)
Oil-packed hot giardiniera, for topping
Directions
For the pot roast: Position an oven rack in the center of the oven and preheat to 300 degrees F.
Liberally sprinkle the entire roast with salt and pepper. Heat the vegetable oil in a Dutch oven over medium-high heat. Brown the roast on all sides until golden and caramelized, 5 to 7 minutes per side; reduce the heat if the fat begins to smoke. Transfer the roast to a plate and reduce the heat to medium.
Add the onions and a pinch of salt and saute, stirring occasionally, until just beginning to brown, 8 to 10 minutes. Add the Italian seasoning, crushed red pepper and garlic and saute until fragrant, another minute. Deglaze with the red wine, scraping up the browned bits from the bottom of the pot. Simmer until reduced by about half, another 2 to 5 minutes. Add the stock and thyme and bring to a simmer. Adjust the seasoning of the liquid.
Put the roast back in the pot with any accumulated juices and place in the oven, covered. Cook the roast, turning every 30 minutes and uncovering the pot for the last 30 minutes of cooking, until very tender, 3 to 3 1/2 hours. Transfer the roast to a cutting board and tent with foil. Increase the oven temperature to 350 degrees F for the peppers and bread.
For the sweet peppers: Toss the pepper strips with the olive oil, granulated garlic and some salt and pepper on a baking sheet. Bake, stirring halfway through, until lighter in color and softened, about 45 minutes.
Strain the pot roast jus through a fine-mesh strainer into a bowl and return to the pot. Bring to a simmer and simmer until reduced slightly, 5 to 10 minutes. Adjust the seasoning if necessary. Keep warm.
Once the meat has cooled a bit, remove the twine. Pull the meat into smaller chunks and return to the reduced jus until ready to build the sandwiches.
For the sandwich build: Rub the rolls with some of the giardiniera oil and toast in the oven until golden brown and crispy, 5 to 8 minutes.
Place some beef on a roll, then some sweet peppers (with some of the oil they were cooked in), followed by some hot giardiniera. Pour a small dish of reduced jus. Quickly dunk the whole sandwich in the hot jus, then wrap in deli paper or parchment paper and wait for 2 to 3 minutes while the magic happens. Repeat with the remaining rolls and toppings. When ready, open up and eat!

INGREDIENTS:
4lb Top Sirloin or Top Round
2tbs Dried Oregano (Knorr preferrred)
1.5tbs Garlic Powder
1.5tbs Onion Powder
1.5tbs Dried Basil
1.5tbs Crushed Chilli Flake
1tbs Toasted black pepper
1/2c Kosher Salt
1qt Grapeseed Oil
2qt Beef Stock
2 whole heads of Garlic
2 large Carrots
2 Onion
1 whole stalk Celery
1qt Mild Giardinara
5 Green Bell Peppers
5 Turano, Gonnella, or Amoroso sandwich rolls (cut in half)
COOKING METHOD:
1. Trim fat from beef and set aside, you can always use it as the fat base if you have a food processor but if you don’t, cover the base of your pan with Grapeseed oil.
2. Season beef with salt and pepper. In a large rondeau heat Grapeseed oil under medium / high heat. Sear beef on all sides to brown.
3. Once browned, remove beef and rest on a half sheet tray with a cooling rack. Deglaze pan with your aromatics – the rough chopped, skin on, carrots, celery and garlic and stir with a wooden spoon to melt. Once all the fond has come up from the pan, deglaze with beef stock and stir.
4. Mix in dried herbs, bouillon, and seasonings.
5. Add beef back in with the torn or sliced green peppers, just make sure to remove all the seeds. Cook in oven set at 350 degrees for 1 hour. Checking internal temp to 140 degrees.
6. Once your beef has cooked, take it out and let it rest until cool.
7. Remove your peppers from the jus and place in to another large pot that is on very low heat, then strain your liquid to remove all the onions, celery, carrots, and garlic. Taste for seasoning and add salt if necessary.
8. Once the beef has fully cooled and rested, thinly slice the beef about half an inch thickness if you can and place it all back in the jus with the peppers.
9. Get all your buns ready to start building! Slice your bun in half and take a tong-full of your beef, lay it in gently, then stuff one of the peppers in there and top with your Giardinara. Dip each corner into the jus and wrap up your sandwich in parchment or wax paper.
