Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

Ingredients:
2 lbs chuck pot roast
9 New Mexico chile pods
2 chile pasilla
5 chile de árbol
1 onion
6 garlic cloves
3 bay leaves
1/4 tsp oregano
1/4 tsp cumin
Salt
Pepper
Large burrito tortillas
Your choice of cheese, I used mexican style cheese

Beans -
Rice -
Pico de gallo -
Sour cream
Lettuce

What I love about burritos bowls is that they are really easy and you will absolutely love my recipe with full of fantastic flavor and also my Mexican Shredded Beef recipe is fantastic for tacos, burritos, enchiladas and quesadillas, sliders, casseroles, salads or sandwiches!
A burrito is a dish in Mexican cuisine consisting of a flour tortilla wrapped into a sealed cylindrical shape around various ingredients.
*The tortilla is sometimes lightly grilled or steamed to soften
*Burritos are often eaten by hand, as their tight wrapping keeps the ingredients together.
*Burritos are filled with a savoury filling, most often a meat such as chicken, beef, or pork,
-and often include a large array of other ingredients such as rice, cooked beans,
-vegetables such as lettuce and tomatoes,
-and condiments such as salsa, pico de gallo, guacamole, or crema.
*The word burrito means little donkey in Spanish,
-The name burrito, as applied to the dish, possibly derives from the tendency for burritos to
contain a lot of different things similar to how a donkey would be able to carry a lot.
*is the story of a man named Juan Méndez who sold tacos at a street
during the Mexican Revolution period (1910–1921), while using a donkey as a transport for himself and his food.
To keep the food warm, Méndez wrapped it in large homemade flour tortillas underneath a small tablecloth. As the food of the burrito (i.e., food of the little donkey) grew in popularity, burrito was eventually adopted as the name for these large tacos.

INGREDIENTS
Mexican shredded beef
1 kg Roasting Joint (21 day Matured)
2 Tbsp olive oil for Searing
1 onion , diced (yellow, brown, white)
2 garlic cloves
1 bell pepper (green or red)
200 ml orange juice
2 tbsp lime juice
Half tsp Oregano
Half tsp Cumin
Half tsp Cinnamon
1 Bay leaf
800 ml beef stock
Burrito Bowl:
3 cups cooked rice
2 cups cooked black beans
2 cups cooked Corn
2 cups Salsa Cruda/ Pico de gallo
2 cups Guacamole
2 cups lettuce
1 cups Sour cream
This recipe will serves for: 6-8 PEOPLE
INSTRUCTIONS
Step 1
Cut Roasting Joint into big pieces and sprinkle with salt and pepper
Step 2
Heat the olive oil in a large pot and fry the beef pieces over high heat for 2-3 minutes on each side, Remove onto a bowl
Step 3
Add the onion, garlic and bell pepper, cook for 2-3 minutes until soft.
Step 4
Add the orange juice,lime juice and scrape the bottom of the pot
then add Oregano, Cumin, Cinnamon and Bay leaf.
Step 5
Return beef into pot
Add 800 ml beef stock
Put the lid on and cook for 2 hours
Step 6
Discard the bay leaves.
Shred the beef using two forks.
Toss beef back into the sauce.
Mexican Shredded Beef is ready to serve
Step 7
Fill six bowls with a half a cup of rice in each. Arrange the shredded beef, black beans, Corn, Salsa Cruda ( pico de gallo ), lettuce, Guacamole and then top with Sour cream
Garnish with the chopped coriander
and enjoy!
Tip and Tricks:
*True Mexican Shredded is typically made with sheep, goat or beef.
*Slow braising is typically the way to get the beef melt in your mouth.
*You can replace the Sour cream with Greek Yoghurt,
If you wanted something lighter than sour cream
*the Mexican Shredded can be prepared up to 2 days ahead.
*You can freeze it the leftovers once it’s cooked for up to 2 months
*If you’re planning on making this in the high pressure pot it take 60 minutes.
*Cooking time will depending on your pot and the thickness (size) of your beef.
*Feel free to add some of your favorite shredded cheese.
*If you are not a fan of beef, try Chicken instead of beef.

*یک داستان هست که میگه اقایی به اسم خوان مندز در زمان جنگ داخلی مکزیک تو خیابون تاکو میفروخت، خوان ، برای اینکه بتونه تاکو هاشو گرم نگه داره اونهارو بین یک نان بزرگ میپیچید و دورشون یک دستمال سفره بزرگ میپیچید ، کم کم بین مردم باب شد که بگن : غذای خر کوچک و در آخر هم شد بوریتو . در واقع تاکو در حجم بزرگ????
