COUSCOUS RECIPE 1 Cup Dry Couscous = 1 Cup Hot Broth = 2 Cups of Cooked Couscous = 4 Servings
Ingredients: Olive Oil - 1 Tbsp Dry Couscous - 1 Cup Hot Broth (Vegetable / Protein) - 1 Cup Salt - As Required Lemon Zest - 1/4 tsp Lemon Juice - 2 Tbsp Green Onions (Scallions), chopped Parsley Leaves, chopped Cumin Powder (optional)
Directions: Heat 1 Tbsp Olive Oil, add Couscous. Stir Continuously for 2 minutes. Add Lemon Zest. Mix. Turn off the Heat. Add the Hot Broth. Mix once. Cover immediately and let sit for 10 mins without disturbing. The Couscous should absorb all the liquid. Uncover and Fluff with a Fork. Add Salt if required. Add Lemon Juice, Green Onions, Parsley Leaves, and Cumin Powder as Required. Serve with Lemons on the side.
