Cake Mix Upsizer - Bring Your Box Mix Back to 18.5oz
For years, manufacturers have been giving us less product instead of raising the price - although now it seems like we are paying more and getting less. For decades, the standard box of cake mix from all the major makers and store brands was 18.5 ounces. A few years ago, the amount of cake mix began to shrink, and now the standard is 15.25 ounces. However, if you're like me, the size of pans we bake in is still the same. If you miss the fuller sized cakes you used to get with the old size mixes, this upsizer will help to add volume.
1 1/2 cups all-purpose flour
1 cup sugar
2 tsp. baking powder
1/4 tsp. baking soda
Combine all ingredients in a large bowl. Whisk or sift together and transfer to an air-tight container (I keep mine in a wide-mouth Mason jar).
To use with cake mixes OTHER THAN chocolate (white, yellow, spice, pineapple, etc.):
Add 6 TBSP of upsizer to 15.25 ounce cake mix
When using a chocolate cake mix:
Add 4 1/2 TBSP upsizer and 1 1/2 TBSP cocoa powder to 15.25 cake mix
