RECIPES:
Sweet & Spicy Sauce-
1. Add 3 teaspoons of brown sugar, 2 teaspoons of hot sauce, and 1-2 teaspoon of water to a sauce pot.
2. Bring the mixture to a gentle boil over medium heat.
3. Lower heat to low and let simmer for 3-5 minutes or until it's caramelized.
One Pot Sweet Spaghetti-
1. Brown about 1 pound of ground beef. Add in some chopped veggies, we normally add carrots, broccoli, onions, peppers, and tomatoes. (use about 1.5-2 cups of veggies)
2. After they've cooked for about 5 minutes add in a can of sliced mushrooms and a can of pasta sauce.
3. Season it with a teaspoon of basil, onion powder, garlic powder, parsley, and pepper. As well as about 1/2 cup of brown sugar.(more or less depending how Sweet you want it)
4. Let you sauce simmer for about half an hour to help develop flavor.
5. Fill you pasta sauce can with water and add it to the pot as well as some pasta.
6. Let it cook until pasta is tender.
Chicken Spinach Havarti Pizza-
1. Partially cook your spinach in a pan with some water
2. Add 2 teaspoons of garlic, and 3 teaspoons of oil to some pizza dough.
3. Add shredded chicken, spinach, and cheese on top.
4. Bake at 425 for about 5-10 minutes
Beef Barley Stew-
1. Brown about 1 pound of hamburger. Then add in some chopped carrots and let cook for 3 minutes.
2. Add in 1 cup of barley, 2 cups of beef broth and 1 can of diced tomatoes.
3. Let this simmer for 30 minutes or until the barley is tender.
4. Add in 1 cup of frozen corn and green beans and let cook until tender.
Cauliflower Cheeseburger Casserole-
1. Brown about a pound of hamburger.
2. Chop your cauliflower and onions, then saute them with 1 teaspoon of seasoning salt, paprika, pepper, and garlic powder.
3. Make a cheese sauce with 1/2 cup of cream cheese, 1/2 cup of shredded cheese, and a 1/4-1/2 cup of milk(use more or less to get a nice creamy consistency.
4. Add your beef and veggies to the sauce and mix until well combined.
5. (optional) add some frozen French fries to a greased casserole dish.
6. Add in your meat mixture and top with more cheese.
7. Bake it at 350 for about 25 minutes or until it's bubbly and cooked through.
Hearty Pork Stew with Root Vegetables

Meltingly tender pork browned, then stewed with tender root vegetables, its going to become a new family favorite. This recipe can be made in advance, freezes well, is inexpensive and is easy to make. Ingredients below:

1.1 kg / 2 ½ lbs boneless pork roast, cut into 1 cubes
¼ cup plain / all-purpose flour
2 tsp salt, (divided)
2 tsp black pepper, divided
1 tsp smoked paprika
3 tbsp olive oil
1 large onion, chopped
2 leeks, sliced (optional)
4 garlic cloves, minced
1 cup white wine (or chicken stock)
2 celery stalks, cut into ½ chunks
5 carrots, peeled and cut into ½ chunks
4 medium waxy potatoes, cut into 1 chunks
2 cups chicken stock
400g can diced tomatoes
2 tbsp Worcestershire sauce
2 bay leaves
1 tsp dried basil
½ tsp dried oregano
8 oz firm mushrooms, chopped
1 cup frozen peas
1 bunch parsley, chopped for garnish
To serve
Mashed potato

VOL 2: Doug Almond’s Braised Shin of Beef with Onions, Mushrooms and Barley
A very Happy Birthday to Doug Almond! To celebrate we have another cooking video for you, this time its Doug Almond’s Braised Shin of Beef with Onions, Mushrooms and Barley
Ingredients:
• 1lb shin of beef
• 1 ½ thinly sliced onions
• Handful of sliced mushrooms
• Small handful of barley
• Bouquet garni (selection fresh herbs, tied together)
• Tomato puree
• 250ml Red wine
• Plain flour
• Red wine vinegar
• 1 tsp Dijon mustard
• Tomato ketchup
• Worcester sauce
• Tender-stem broccoli
• Sweet potato
• Grated cinnamon
Method:
Preheat the oven to 200 degrees
Shin beef casserole
1. Season the shin beef in a bag with flour, salt and black pepper. Shake the bag over the sink until the steaks are coated in the seasoned flour
2. Heat vegetable oil in a large casserole dish over a high heat
3. Once hot add the beef, wait to hear the sizzle from the oil. Turn the steak when well browned on one side and allow the other side to brown. Do not turn them too early!
4. Wash the barley (pulses) in a little warm water and leave to soak
5. Once cooked place the steaks in the oven in a separate dish
6. Add the sliced onions to the same pan the beef steaks were cooked in, put the lid on to sweat off until transparent
7. Add the sliced mushrooms, bouquet garni and a squirt of tomato puree. Stir to coat
8. Drain the barley and add to the pan
9. Add the stock (without spilling it!)
10. Add the red wine
11. Season with black pepper
12. Add the shin beef and juices to the pan and cover with the vegetables and sauce
13. Add Dijon mustard, a dollop of tomato ketchup and a little Worcester sauce
14. Give it a quick mix, put the lid back on and put in the oven at 200 degrees for a few minutes then turn it down to 180 degrees. Leave to cook for an hour and a half
15. Once out of the oven pour a little red wine vinegar into the casserole
Sides:
Tender-stem broccoli
1. Heat a wide based dry pan put the broccoli in to singe
2. Add some butter and a little boiled water and season.
Sweet potato mash
1. Boil and mash sweet potatoes and mix with some butter and fresh, grated cinnamon
To serve
Serve the beef steaks with the sweet potato mash and singed tender-stem broccoli with the juices poured over.
