Hey friends!
Have you ever ventured into the world of dehydrating food?! You should give it a try! It's super easy & very rewarding! There are so many great creations YOU can make with a food dehydrator. Parker likes when I puree strawberries with honey on parchment paper and dehydrated it...then we cut them into strips for our very own homemade fruit roll ups!
You can dry fruit, veggies and even back country MEALS which is what we'll be doing in today's video. Dehydrating is a wonderful way to preserve food for long time storage. Maybe you're going on a camping trip or sending your husband off hunting...or maybe you're like me and you've got a lil prepper in ya...and you want to have some food saved up JUST in case of an emergency! No matter what it is, dehydrating your food is not hard at all. Trust me! :)
I'm always fascinated at how dehydrated food comes back to life when you re-hydrate it with some water. And you guys...with the right ingredients, it's delicious!
In today's video I'm going to be making 3 simple recipes. Each recipe creates 3 meals and each meal will feed about 2 people...maybe 3 if your sharing with one of your kiddos!
For these 3 recipes you will need your dehydrator & a kitchen scale (I bought mine on Amazon for less than $13). You will also need to cook & dehydrate your ground beef & chicken ahead of time. I used about 3 lbs of ground beef & about 10-12 chicken breasts. You can cook your meat however you'd like before you dehydrate it, just remember you don't need to season it because we will be adding seasonings to the meals before we package them up for storage!
**Important** when you cook your ground beef, rinse it thoroughly in a colander under hot water...mix it around good and squeeze as much fat/grease out as you can...too much grease & fat can spoil the food quicker! Then I just lay out the ground beef on a cookie sheet and press out the excess water with paper towels before dehydrating.
I dehydrate all of my meat around 155 degrees for 8-12 hours & I dehydrate the mixes I share in this video at about 135 degrees for 8-12 hours.
For my dehydrated meals, I shoot for 150 grams total per meal. 50 grams of that is my meat & the rest is made up of the mix & seasonings that I add.
✅ Beef Macaroni:
1. Dehydrated ground beef
2. 2 cups cooked macaroni noodles
3. 1 cup chopped yellow bell pepper
4. 1 cup sautéed onions
5. 1 cup diced tomatoes
6. 2 TBS powdered milk (can add a little extra if you'd like)
7. 2 TBS powdered cheese (can also add a little extra to make it more cheesy!)
8. A pinch of salt & pepper
✅ Chicken Spanish Casserole:
1. Dehydrated chicken
2. 2 cups cooked rice (any kind of rice will do, just make sure it's cooked)
3. 1/3 cup salsa
4. 1 can of cream of chicken soup
5. 1 can of rinsed/drained black beans
6. 1/2 cup frozen corn
7. 1/2 tsp chilli powder
8. 1/2 tsp paprika
9. Pinch of salt & pepper
✅ Chicken Curry:
1. Dehydrated chicken
2. 2 cups cooked rice
3. 1 cup coconut milk
4. 1 cup sautéed mushrooms & red bell peppers (about 1 bell pepper & 5-6 mushrooms)
5. 1/2 cup frozen peas
6. 1/2 tsp garlic powder
7. 1/2 tsp chilli powder
8. 3/4 tsp curry powder (a little extra if you'd like)
9. Pinch of dried parsley
10.Pinch of salt & pepper

■月曜日 鮭ときゅうりの混ぜ寿司弁当
【タンパク質量】鮭1切れ17.8g+卵1個6.1g=23.9g
<材料(1人分)>
玄米ご飯.........100g
鮭..................1切れ(80g)
きゅうり.........½本
卵..................1個
ほうれん草.......1袋(200g)※3食分
酢...................大さじ1
てんさい糖.......小さじ1
塩....................小さじ½
マヨネーズ.......小さじ2
白すりごま.......小さじ2
しょうゆ..........小さじ½
あれば、白いりごま適量
<作り方>
・ボウルに玄米ご飯100g入れておく
・鮭ときゅうりの混ぜ寿司
①鮭1切れに熱湯をかけてから軽く水で洗い、水気を拭いたらアルミホイルに乗せて魚焼きグリルで焼き、身をほぐす
②きゅうり½本は輪切りにして塩小さじ½をふり、数分放置した後にしっかり水切りする
③卵1個を溶いて薄焼き卵を作り、細く切る
④玄米ご飯の入ったボウルにほぐした鮭ときゅうり、細く切った卵、酢大さじ1、てんさい糖小さじ1を入れてよく混ぜ合わせる
・ほうれん草のごまマヨ和え
①フライパンに熱湯を入れて中火にかけ、水洗いしたほうれん草1袋分を根本側から30秒、柔らかくなったら全体をお湯に浸して30秒-1分茹でる
②ほうれん草を水にさらしてから水気を切ったら、4cm幅にカット
③ほうれん草にマヨネーズ小さじ2、しょうゆ小さじ½、白すりごま小さじ2を入れてよく混ぜ合わせる
・全ての食材が冷めたら、お弁当に盛り付けて完成
■火曜日 鶏のバジルチーズ弁当
【タンパク質量】鶏むね肉150g=32g
<材料(1人分)>
玄米ご飯.........100g
鶏むね肉.........150g
にんじん.........½本※2食分
作り置き:ほうれん草のごまマヨ和え
粉チーズ.................大さじ½
乾燥バジル..............小さじ½
片栗粉....................小さじ1
塩少々
ごま油....................小さじ1
しょうゆ.................小さじ1
白すりごま..............小さじ1
顆粒和風だし...........小さじ½
<作り方>
・玄米ご飯100gを用意する
・鶏のバジルチーズ
①鶏むね肉150gを用意し、1口サイズにそぎ切りしたらボウルに入れて粉チーズ大さじ½、乾燥バジル小さじ½、塩少々入れてよく混ぜ合わせる
②フライパンにオリーブオイル大さじ2を入れて、鶏むね肉に片栗粉小さじ1を薄くまぶしてから揚げ焼きする
・にんじんのきんぴら
①にんじん½本を千切りしてレンジ600Wで1分加熱し、ごま油小さじ1、しょうゆ小さじ1、顆粒和風だし小さじ½、白すりごま小さじ1を入れてよく混ぜ合わせる
②作り置きしていたほうれん草のごまマヨ和えを用意する
・全ての食材が冷めたら、お弁当に盛り付けて完成
■水曜日 ハンバーグ弁当
【タンパク質量】豚ひき肉21.2g +卵1個6.1g=27.3g
<材料(1人分)>
玄米ご飯.........100g
豚ひき肉.........120g
作り置き:ほうれん草のごまマヨ和え
作り置き:にんじんのきんぴら
ケチャップ.............小さじ2
酢..........................小さじ1
てんさい糖.............小さじ½
塩胡椒...................少々
<作り方>
・玄米ご飯100gを用意する
・ハンバーグ
①豚ひき肉はパックのまま塩胡椒少々振り、お弁当箱に詰めやすい大きさに分割する
②フライパンに豚ひき肉をそのまま乗せて表面を焼き、軽く焼き目がついたらひっくり返して蓋をして2分蒸し焼きする
③火を止めて、フライパンにケチャップ小さじ2、酢小さじ1、てんさい糖小さじ½を加えて軽く混ぜ合わせたら、弱火で豚ひき肉にタレを絡める
・作り置きしていたほうれん草のごまマヨ和えを用意する
・作り置きしていたにんじんのきんぴらを用意する
・全ての食材が冷めたら、お弁当に盛り付けて完成
■木曜日 まかじきの生姜照り焼き弁当
【タンパク質量】まかじき1切れ18.5g+卵1個6.1g=24.6g
<材料(1人分)>
玄米ご飯.........100g
まかじき.................1切れ(80g)
オクラ....................5本※2食分
にんじん.................½本※2食分
卵......................1個
梅......................大1つ
しょうゆ.................小さじ1.5
みりん....................小さじ1
生姜チューブ..........3cm
ごま油...................小さじ1
鶏ガラスープの素...小さじ½
胡椒......................少々
韓国のり...............ひとつまみ(2g)
<作り方>
・玄米ご飯100gを用意する
・まかじきの生姜照り焼き
①まかじきはお弁当箱に詰めやすい大きさに切り分けて、熱湯をかけたら軽く水で洗い、フライパンに乗せて表面を焼く
②しょうゆ小さじ1、みりん小さじ1、生姜チューブ3cmで味付けする
・おくらの梅のり和え
①フライパンに熱湯を入れて中火にかけ、オクラ5本を塩で板ずりした後に1分茹でたら冷水で冷やす
②オクラは適当な大きさにカットし、叩いた梅大1つと韓国のりをひとつまみ(2g)を加えて優しく混ぜ合わせる
・にんじんのナムル
①にんじん½本は千切りしてレンジ600Wで1分加熱し、ごま油小さじ1、しょうゆ小さじ½、鶏ガラスープの素小さじ½、胡椒少々を入れてよく混ぜ合わせる
・卵1個を溶いて卵焼きを作る
・全ての食材が冷めたら、お弁当に盛り付けて完成
■金曜日 鶏の粒マスタードしょうゆ弁当
【タンパク質量】鶏むね肉150g=32g
<材料(1人分)>

作り置き:にんじんのナムル

10 MIN EASY Chicken Soup with Pears 旺梨鸡汤 (Thermal Pot Cooking)
This is the last recipe we prepared specially for Chinese New Year. We thought this Chicken Soup with Pears is an excellent dish to be added on your reunion dinner menu because of its cooling effects. I’m not sure about you but we’re definitely going to gobble down lotsa bak kwa, love letters, pineapple tarts and other heaty food so this soup can help balance things out a little (or so we hope ????)

Ingredients:
Serves 6 - 8
1 whole chicken about 1 kg
250 g of lean pork - cut into cubes
6 pieces of Chinese yam also known as huai sheng
4 pieces of honey dates
2 pieces of pears (you can use any types of pears)
15 g of northern almonds
15g of southern almonds
Add enough water until 1 inch above the ingredients in the pot
1 tablespoon of wolfberries
2 teaspoons of salt

Recipe for Marinara:
28 oz. can of low-sodium crushed tomatoes.
1 Tbsp. dried oregano
1 Tbsp. dried basil
1 tsp. onion powder
1 tsp. garlic powder
1/4 tsp. red pepper flakes
1 Tbsp. maple syrup
Salt to taste
Place ingredients in a sauce pot over medium heat until it starts to bubble, about 3-5 minutes.
Reduce heat to low and simmer, covered for another 5-8 minutes, stirring often.
Turn off heat and serve.

Recipe for tofu ricotta (From The Starch Solution):
1 12.3 ounce package silken tofu
1 pound fresh water-packed firm tofu
1/2 tsp garlic powder
¼ cup nutritional yeast
1/4 teaspoon salt
½ teaspoon pepper
1 tablespoon parsley
1 teaspoon basil
1 teaspoon oregano
¼ cup lemon juice
¼ cup plant milk
5oz fresh spinach chopped into small pieces
Combine all of the above ingredients except for spinach in a food processor and process until fairly smooth. In a large bowl, add chopped spinach and tofu mixture. Fold together until combined.
Refrigerate until ready to use.

Cooking instructions for casserole:
1 box large shells cooked to manufacturers specifications
In an casserole dish, ladle out enough marinara to cover the entire bottom
Add two heaping tablespoons of ricotta/spinach mixture into each shell.
Lay stuffed shells out in the dish next to each other.
spoon the rest of the marinara on top of the shells
Cook in preheated oven at 375F for 25 minutes, until the sauce is bubbling.
Remove from heat, plate up and serve.
