How To make Bananas and Pancakes
1 lg Or 1-2 small bananas per
Person 2 tb Lemon juice
2 tb Calvados, grand marnier or
Cointreau 5 fl Oz orange juice
2 tb Molasses sugar
1 Egg
4 oz Flour
10 fl Oz lager beer
Make pancakes with lager, flour and egg, and cook in the normal way (I used a cooking spray to grease a non-stick frying pan). Fold each pancake in half, and then in half again, so it forms a quarter-circle (if you're as bad at cooking pancakes as I am, they'll come out in bits anyway - if so, pretend it didn't happen!), and place them in a large flan dish. Peel bananas, cut in half long-ways and in half again cross-ways, and place face-down on top of the pancakes. Put the remaining ingredients into a frying pan or small saucepan, and boil for 3-4 minutes, until just beginning to be syrupy. Pour over bananas and pancakes, and bake in a moderate oven (Mark 4 - 350 F) for 20-30 minutes. I served this with fromage frais (cream substitute) and a chocolate sauce, for which the recipe follows:

Hi Guys, today I’ll show you how to make Pancakes with Caramelized Bananas. It’s a little more special than having just pancakes for breakfast.
We’ll need one pan to make the pancakes and one to make the caramelized bananas.
First I’ll make the fluffy pancakes. I’ve already done a How to Make Pancakes video and you can watch that recipe by clicking the link below:

It’s a really simple and quick recipe. I put the batter into a measuring cup so it’s easier to pour onto the griddle. Put a little butter on the griddle. Pour about ½ cup batter and cook until you see bubbles around the pancake, about 2 minutes. It’s time to turn them over. Cook for another 1-2 minutes until they are cooked.
For the caramelized bananas, we need 2 bananas. They should be ripe but not over ripe, otherwise they will turn to mush. Peel the banana on one side and put it down with the peel on the other side. Slice with a small knife. Add 2 tblsps butter to the hot pan. Now add ¼ cup of brown sugar and let that melt together nicely. That looks good, add the bananas. It’s easy when you slice them on the peel so they stay together. Stir them gently. Add ½ tsp of ground cinnamon. Turn them over so they are nicely coated with the sauce. It’s thick and bubbly. This is perfect spooned over your fluffy pancakes. This is a delicious and filling breakfast. The pancakes are big and you should get 4 from this recipe. Easy vegan banana and cinnamon pancakes, my fave Sunday breakfast! It was the rainiest day when we filmed these, and they instantly changed all of our moods. Can't wait for you to try them!
Ingredients
- 100g porridge oats, 1 cup
- 200ml almond (or oat) milk, 1 cup
- 80g ground almonds, 1 cup
- 2 very ripe bananas, mashed
- 2 tablespoons maple syrup
- 1 tablespoon chia seeds
- 2 teaspoons cinnamon
- Pinch of salt
- Coconut oil for cooking
Method
Pulse the oats into a flour, then add the flour to a bowl with the ground almonds, cinnamon, salt and chia seeds, mix well. Now add the almond milk, mashed bananas and maple syrup and mix well, until a pancake batter forms.
Place a frying pan over a medium heat and add a tablespoon of coconut oil. Once warm, add a heaped tablespoon of the pancake mixture to the middle. Cook for 2-3 minutes until the bottom has cooked. Flip and cook on the other side for minute or so before stacking them and piling high with banana slices, almond butter and maple
