How To make Banana and Mango Bread
1 c Butter
1 1/4 c Packed Brown Sugar
3 Eggs
3 c Self-raising flour
1/2 ts Salt
1/2 ts Cinnamon
1/4 ts Grated Fresh Nutmeg
1 1/2 c Mashed Ripe Bananas
1 Small Ripe Mango
1 c Golden Raisins
1/2 c Chopped Walnuts
* The recipe says to use self-raising cake/pastry flour and the small ripe mango should be peeled and pureed. In a bowl, cream the butter with sugar until fluffy; beat in eggs, one at a time, until incorporated. In another bowl, combine self-raising flour with salt, cinnamon and nutmeg. Combine mashed bananas with mango puree. Mix the dry ingredients and banana mixture, alternately, into the creamed mixture until batter is just combined; fold in raisins and nuts. Pour batter into 2 greased 8 1/2 by 4 1/2 inch loaf pans. Bake at 350 degrees for 50 - 60 minutes or until cake tester
inserted in the centre tests done. Leave in pan for 10 minutes; remove form loaf pans and let cool on racks. Makes 2 loaves. From The Gazette, 91/02/13.

INGREDIENTS:
One ripe mango
Egg (you can skip egg)
Blend until smooth
All purpose flour 2 cup
Sugar 1/4 cup
Yeast 2 tsp
Mix well
Add mango egg mixture
Mix well
Warm milk 3-4 tbsp (add gradually)
Oil 3 tbsp
Knead for 10 mins
Smooth dough
Rub some oil
Rest for 60-90 mins
Divide
Put some mango jam
Greased pan
Rest for 10 mins
Brush cold water
Bake in a preheated oven at 160c for 20-30 mins
Brush butter
Cover with damp cloth
Let it cool completely
NOTE: 1 CUP = 250 ML

1 cup of sugar and half cup of melted unsalted butter and beat it until nice and fluffy and add two eggs one at a time,1 tablespoons of milk ,1 teaspoon of cinnamon powder, 1 teaspoon of vanilla extract,2 cups of ripe pulp of sweet mangoes and add to the mixture and blend together and 2 cups of all purpose, flour, add 1 teaspoon of baking soda, and 1 teaspoon of baking powder and a pinch of salt and blend all together and pour the batter and smooth out the top at 325 for 60-70 minutes until the toothpick clean

Soft & Moist Mango Bread
Ingredients:
1¾ All Purpose Flour
1 tsp Baking Soda
1/2 tsp Salt
3 Ripe Yellow Sweet Mangoes (slice & cut into diced...puree 1 cup diced mango & the remaining use for filling and toppings)
1 cup light Olive Oil
3/4 cup Sugar
2 Eggs
Bake in the oven at 350°F for 50-60 minutes or till nothing sticks on the toothpick.

Banana Mango Bread Recipe | Moist and Soft Bread | EASY RICE COOKER CAKE RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 cup (140g) ALL PURPOSE FLOUR (plain flour)
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• Pinch of SALT
• 1 cup (260g) MASHED BANANAS (2 large bananas)
• 1 EGG
• 1/4 cup (50g) LIGHT BROWN SUGAR
• 1/2 tsp (3g) VANILLA FLAVORING
• 3 tbsp (45g) PLAIN YOGURT/SOUR CREAM
• 1/4 cup (60ml) COCONUT OIL
• 1/2 cup (85g) CUBED MANGOS (fresh-frozen-canned)
• 1/4 cup (45g) CUBED PEACHES (fresh-frozen-canned)
• 4 tbsp (35g) ALL PURPOSE FLOUR (dust on fruit)
HOW TO MAKE IT:
1. Mix flour, baking powder, baking soda and salt to combine
2. In a large mixing bowl, whisk together mashed bananas, egg, brown sugar, vanilla, yogurt or sour cream and coconut oil to incorporate
3. Dust flour onto fruits to thoroughly coat them. Use one tablespoon at a time. You may need less. NOTES: If using frozen fruits, thaw on paper towels just to remove outer ice. If using canned fruits, drained on paper towels. Pat dry with paper towel
4. Whisk dry ingredients to wet batter to incorporate
5. Pour batter into grease or lined pot
6. Pick out pieces of fruits (do not dump the entire flour and fruit mixture in) then place them on top. Now push them just under the batter and spread batter to cover the fruits. I like doing it this way so I have fruits evenly distributed through out the bread
7. Cover with paper towel and bake for 2 bake cycles (60 min) then check. Rice cooker varies so bake longer as needed
8. Cool for 20-30 minutes and enjoy it warm
OVEN BAKING:
Bake in greased pan, in pre-heated oven of 350F (180c) for 30-40 minutes. Ovens varied so check about 35 minutes and bake longer as needed
