How To make Banana and Mango Bread
1 c Butter
1 1/4 c Packed Brown Sugar
3 Eggs
3 c Self-raising flour
1/2 ts Salt
1/2 ts Cinnamon
1/4 ts Grated Fresh Nutmeg
1 1/2 c Mashed Ripe Bananas
1 Small Ripe Mango
1 c Golden Raisins
1/2 c Chopped Walnuts
* The recipe says to use self-raising cake/pastry flour and the small ripe mango should be peeled and pureed. In a bowl, cream the butter with sugar until fluffy; beat in eggs, one at a time, until incorporated. In another bowl, combine self-raising flour with salt, cinnamon and nutmeg. Combine mashed bananas with mango puree. Mix the dry ingredients and banana mixture, alternately, into the creamed mixture until batter is just combined; fold in raisins and nuts. Pour batter into 2 greased 8 1/2 by 4 1/2 inch loaf pans. Bake at 350 degrees for 50 - 60 minutes or until cake tester
inserted in the centre tests done. Leave in pan for 10 minutes; remove form loaf pans and let cool on racks. Makes 2 loaves. From The Gazette, 91/02/13.

How to Make Mango Bread Loaf
Ingredients:
2 cups flour
1 cup sugar
2 teaspoons cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3/4 cup oil
2 eggs
3 Manila mangoes (about 2 1/2 cups), peeled and chopped
1/2 cup raisins
1 tablespoon lemon juice
Instructions:
Grease a 9 x 5 loaf pan and set aside.
In a bowl, combine flour, sugar, ground cinnamon, baking soda, and salt. Whisk together until well-distributed.
In a small bowl, combine oil and eggs. Beat until well-blended and add to flour mixture.
Add mangoes, raisins, and lemon juice. Mix well.
Pour mixture into the prepared loaf pan and bake in a 350 F oven for about 50 minutes to 1 hour or until a toothpick inserted in the middle comes out clean.
Remove from oven and allow to cool before slicing.

Ingredients needed to make mango bread / mango cake are :
2 cups all purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 ripe mango, mashed
2 tbsp milk
1/2 cup of olive oil
3/4 cup of brown sugar
2 eggs
How to make mango bread / mango cake
Preheat oven at 325*F.
Grease a 9x5 inch loaf pan.
Mix flour, baking powder, baking soda and salt in a bowl.
Cut the mango and mash
Add the milk.
Beat brown sugar and oil
Add eggs to the mixture, one at a time beating well after each addition.
Pour the egg mixture into dry mixture and mix thoroughly.
Stir mango mixture into the batter mixture.
Pour batter into prepared pan.
Bake in the preheated oven until a toothpick inserted into the center comes out clean for about 60 minutes.
Cool in the pan for 10 minutes before removing to cool completely on a wire rack before slicing.

How to make a Banana-Mango Bread

Ingredients
• 1 large mango, cut into small chunks
• 60g (1/3 cup) Butter, melted and cooled slightly
• 2 eggs
• Over ripe Bananas, mashed
• 60g (1/4 cup) greek yoghurt
• 60ml (1/4 cup) milk
• 240g (2 cups) flour
• 1 tsp baking powder
• 1/2 tsp baking soda
Instructions
1. Preheat oven to 175C / 350F. Line a baking tray with baking paper / silicon baking mat and grease a 9 x 5 square tin with butter.
2. Evenly spread the mangoes onto the prepared baking tray and coat it with about a tablespoon of flour. Bake in the oven for 15 mins, or until juicy and soft. Remove from the oven and allow to cool.
3. In a mixing bowl add the butter, eggs, banana, yogurt and milk. Mix until combined and no lumps of yoghurt remain.
4. In a separate mixing bowl add the flour, baking powder, baking soda and and stir until combined.
5. Mix the wet with the dry until combined and then gently fold in the mango.
6. Pour the batter into the prepared square tin. Bake for approx 50 mins (until a toothpick inserted into the centre comes out clean.)
7. Cool in the tin for 10 mins before transferring to a wire rack.
