Banana Loaf Cake
2 cups ALF/250G
1 cup CF/125G
2 tsp Baking soda
2 tsp Baking Powder
1 tsp Salt
1 tsp Cinnamon
10 Ripe Bananas/2 1/2 cups
1 cup White sugar/200G
1 cup Brown sugar/200G
4 Eggs/Medium
1/2 tbsp Vanilla
1 cup Canola oil
1/2 cup Fresh milk/125ml
1/2 cup Yogurt/125ml
1/2 cup Chocolate
1/2 cup Walnuts
Streusel Topping
1/2 cup Butter/half pack 112G
250G Sugar
1 cup ALF/125G
1 tsp Cinnamon
Preheat 160C Bake for 60 mins. to 75mins do a toothpick test.

Banana Muffins:
3 bananas
¾ cup brown sugar
¼ cup vegetable oil
1 large egg
1 ½ tsp lemon juice
1 ¼ cup plain flour
½ tsp baking soda
¼ tsp baking powder
¼ tsp salt
Crumb Topping:
⅓ cup light brown sugar
¼ cup plain flour
½ tsp cinnamon
1 tbsp unsalted butter

Banana Crunch Muffins

Ingredients
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, melted and cooled
2 extra-large eggs
3/4 cup whole milk
2 teaspoons pure vanilla extract
1 cup mashed ripe bananas (2 bananas)
1 cup medium-diced ripe bananas (1 banana)
1 cup small-diced walnuts
1 cup granola
1 cup sweetened shredded coconut
Dried banana chips, granola, or shredded coconut, optional
Directions
Preheat the oven to 350 degrees F.
Line 18 large muffin cups with paper liners. Sift the flour, sugar, baking powder, baking soda, and salt into the bowl of an electric mixer fitted with a paddle attachment. Add the melted butter and blend. Combine the eggs, milk, vanilla, and mashed bananas, and add them to the flour-and-butter mixture. Scrape the bowl and blend well. Don't overmix.
Fold the diced bananas, walnuts, granola, and coconut into the batter. Spoon the batter into the paper liners, filling each 1 to the top. Top each muffin with dried banana chips, granola, or coconut, if desired. Bake for 25 to 30 minutes, or until the tops are brown and a toothpick comes out clean. Cool slightly, remove from the pan, and serve.

This moist banana streusel bread is so easy it is all made in the blender or with an immersion blender! My banana crumb bread has no nuts and can all be made in one bowl. The easy crumb topping can be omitted for a banana bread that comes together in just 5 minutes!
