well, would you look at that! i AM alive and still baking! :D i've been so excited to post my yearly video (lol), but i haven't had the time until recently. unfortunately, it's not for the reason i'd hoped. i hope all of you are staying safe right now!
and yes, for my ~big comeback~, it's yet another banana recipe! what can i say, bananas are really great for baking :') here's a tip: if your bananas are REALLY getting too ripe, just freeze them in a bag! they won't be good for eating straight-up, but they work just as well in recipes like smoothies (or this one!)
this recipe was made to be egg-free! instead of an egg, you'll use greek yogurt. you can also try an egg if you're not looking to un-egg the recipe.
this was also made using a great nonstick donut pan that i've been meaning to use for a while now! see the sources for a few options for your own donut pan acquisition.
➭ important note: you should make a point to fill your donut pan ALL THE WAY to the top with this batter! they don't rise or spill over as much as you'd think, and filling them only partially gives you flattish, kind of half-bagel banana bread rings.
✿ ingredients:
donuts:
2 ripe bananas
¼ cup plain greek yogurt
1 tbsp white vinegar
2 tbsp neutral oil (i used vegetable)
½ tsp vanilla extract
¾ cup cake flour
3 tbsp cane sugar (or coconut, turbinado, monkfruit, etc.)
½ tsp baking soda
½ tsp baking powder
½ tsp pumpkin pie spice (or just cinnamon)
glaze:
¼ cup powdered sweetener (i used monkfruit, powdered sugar is fine!)
¼ cup almond milk (less if you want the glaze thicker)
1 tsp cinnamon
⌇ recipe:
To make the donuts: In a medium bowl, mash two bananas until smooth, then add the Greek yogurt. Mix until well combined. Add the vinegar, oil, and vanilla extract, then mix again. Add the flour, sugar, baking soda, baking powder, and pumpkin pie spice. Mix until just combined. Grease donut pan if it isn't nonstick. Using a spoon or piping bag, fill each donut cavity up to the top with batter. Bake at 350°F/180°C for 13-15 minutes. Remove from the oven and let cool briefly, then promptly remove so they don't get soggy.
To make the glaze: In a smaller bowl, add the powdered sugar, almond milk, and cinnamon. Whisk until the cinnamon is emulsified. Set up a tray with a wire rack. Dip the donuts in the glaze one at a time and set them on the rack to soak it in.

???? The Ingredients To Make Cinnamon Donuts
Makes about 10 - 11 donuts (Cut with a 3.25-inch | 8 cm cookie cutter)
Dried yeast 7.5 g | 0.26 oz (1 US packet)
• Water 180 g | 6.3 oz (3/4 US cup)
• All-purpose flour 440 g | 15.5 oz (3.5 US cups. *Level the surface.)
• Granulated sugar 50 g | 1.7 oz (1/4 US cup)
• Brown sugar 35 g | 1.2 oz (1/6 US cup)
• Salt 1 tsp
• Cinnamon 2 tsp
• Egg 2 (100 g | 3.5 oz)
• Unsalted butter 56 g | 2 oz (1/2 US stick)
[Cinnamon sugar]
• Granulated sugar 100 g | 3.5 oz (1/2 US cup)
• Cinnamon 1 tsp
[Deep-frying]
• Oil some (Deep-fry donuts at 340 F | 170 C for about 2.5 - 3 minutes in total.)
